Roasted Masala Brinjal.


Roasted Masala Brinjal is a delicious masala curry made with long green brinjal and goes well with rice, chapathi, phulka, naan etc.A detailed recipe and step by step method with photos.

The following ingredients are needed to prepare Roasted Masala Brinjal.

Ingredients:-

Long green Brinjal. - 6
Salt.                         -to taste

For Coconut Masala paste :-

Grated Coconut.   -1cup
Ginger.                  - a small piece.
Garlic.                   - 4 cloves
Cumin powder.      -1tsp
Coriander powder. -1tsp

For grinding the Onion Tomato paste:-

Onion.                          -2
Tomato.                        -2
Green chilly.                 -2
Dry Red chillies.          -3
Red chilly powder.       -1tsp
Turmeric Powder.         -1/4tsp
Bay leaf .                       -1
Garam masala Powder.  -1tsp
Salt.                               - to taste
Oil.                                 - 4tsp

Instructions:-

1. Peel and chop the Onion into small pieces and keep aside.

2. Wash and chop Tomato into small pieces and keep aside.

3. Wash and chop the Green chillies into small pieces and keep aside.

4. In a pan dry roast grated Coconut till it becomes light brown in colour and grind the roasted Coconut along with chopped Ginger and Garlic to a fine paste adding very little water.

5. Remove the stem, wash and chop the long green Brinjal into halves lengthwise. Again chop the halves into 1 inch lengthy pieces. In a mixing bowl add the chopped long green Brinjal pieces, Coriander powder, Cumin powder and little Salt and mix well.


6. Add the ground Coconut paste into the mixing bowl.

7. Mix the ground paste till the long green brinjal pieces nicely coated with the ground Coconut masala. Keep aside the mixture to marinate for 15 minutes.

8. Heat oil in a pan and add Bay leaf and Red chillies and roast in oil for a minute. Add the chopped Onion pieces and little Salt into the pan and saute well for 4 minutes.

9. Add chopped Tomato and Green chilly pieces into the pan and saute well for 2 minutes on low flame.

10. Add Red chilly powder and Turmeric powder into the pan and saute well for 3 minutes on low flame and switch off the flame. Keep aside the Onion Tomato mixture to cool.



Method :-

1. Grind the Onion Tomato mixture to a smooth paste.

2. Heat a pan on low flame and pour the ground Onion Tomato mixture paste into the pan and saute well.

3. Add Garam masala powder into the pan and mix with the ground Onion Tomato paste. Saute well for 2 minutes on low flame.



4. Add the masala coated long green Brinjal pieces into the pan and saute well.

5. Add 1/4 cup of water into the pan.Check for Salt and add little Salt if needed and mix all the ingredients for 2 minutes on low flame.

6. Cover the pan with lid and cook on low flame till the long green Brinjal pieces become soft. Saute in between.

7. Open the lid and mix well all the ingredients in the pan and switch off the flame.

8. Transfer Roasted Masala Brinjal to a serving plate.

A very tasty and delicious Roasted Masala Brinjal is ready to serve with Rice, Chapathi, Phulkas, Naan etc.
