Mashinga Sange Sukke is a Konkani style Drumstick dry masala curry goes well as a side dish with rice and dal curry.
The following ingredients are needed to prepare Mashinga Sange Sukke.
Ingredients:-
Drumstick. -5
Salt. -to taste
For grinding the Coconut dry Masala paste.
Grated Coconut. -2 cup
Dry Red chillies. -5
Turmeric powder. -1/4tsp
Coriander seeds. - 3tsp
Tamarind. - a marble size
Jaggery grated. -1tsp
For Seasoning:-
Coconut oil. -1tbsp
Urad dal. -1tsp
Mustard seeds. -1tsp
Hing powder. -1/2 tsp
Instructions:-
1. Remove the outer skin and chop Drumstick into 1 and 1/2 inch lengthy pieces. Wash well and keep aside.
2. Heat 1/2 tsp oil in a pan roast dry Red chillies and keep aside. In the same pan roast Coriander seeds on low flame till nice aroma comes and keep aside.
3. Grind the roasted Red chillies and Coriander seeds along with grated Coconut, Turmeric powder, Jaggery and Tamarind to a coarse paste.Keep aside the coarsely ground Coconut dry Masala paste.
Method:-
1. Heat Coconut oil in a pan. Add Urad dal and saute well. Splutter Mustard seeds and saute well. Add Hing powder and mix well.
2. Add the chopped Drumstick pieces along with 1cup of water and required Salt into the pan. Boil and cook on low flame till the Drumstick pieces become soft and tender.
3. Add the coarsely ground Coconut dry Masala paste into the pan and mix with the cooked Drumstick pieces.Saute well and cook till the water evaporates. Switch off the flame
4. Transfer the Mashinga Sange Sukke/ Drumstick Masala Curry to a serving plate.
