Banana stem is called Gabbo in Konkani. Gabbya Randayi is a delicious Banana stem curry goes well with rice, chapathi etc.A tasty, simple and easy to make Banana Stem Curry recipe and step by step method and photo is given below.
The following ingredients are needed to prepare Banana Stem Curry / Gabbya Randayi.
Ingredients:-
Banana stem (Gabbo). - 3 cup chopped
Toor dal. -1/2cup
Turmeric powder. -1/4tsp
Salt. -to taste
For grinding Coconut Masala paste:-
Grated Coconut. -1 cup
Dry Red chillies. - 5
Cumin seeds. -1tsp
Tomato. -1chopped
For Seasoning:-
Coconut oil. - 2tsp
Dry Red chillies. -2
Curry leaves. -1spring
Instructions:-
1). Wash and chop the Banana stem (Gabbo) into thin round pieces and remove the fiber.Finely chop the thin round pieces and keep aside.

Instructions:-
1). Wash and chop the Banana stem (Gabbo) into thin round pieces and remove the fiber.Finely chop the thin round pieces and keep aside.
2). Wash Toor dal and pressure cook along with finely chopped Banana stem, Turmeric powder, little Salt and 2 cups of water for 2 whistles and keep aside.
3). Grind grated Coconut, dry Red chillies, chopped Tomato and Cumin seeds to a fine paste adding very little water. Keep aside the ground Coconut Masala paste.
4. Broke the dry Red chillies into pieces and keep aside.
Method:-
1). In a cooking vessel add the cooked Toor dal and Banana stem mixture along with cooked water. Boil and cook for a minute on low flame.
2). Add the ground Coconut Masala paste into the cooking vessel.
3). Mix the ground Coconut Masala paste with cooked Toor dal Banana stem mixture.
4). Check for Salt and add little Salt if needed and mix well.Boil and cook for 3 minutes on low flame and switch off the flame.
5). Heat Coconut oil in a small pan for seasoning. Splutter Mustard seeds and saute well. Add broken dry Red chilly pieces and fry well. Add Curry leaves into the pan and fry for a second. Switch off the flame.
6). Pour the above seasoning into the curry in the cooking vessel.
7). Transfer the Banana stem Curry to a serving bowl.
A tasty Banana Stem Curry / Gabbya Randayi is ready to serve with rice or chapathi.
