Gabbo Chawli Upkari is a delicious stir fry made with Gabbo (Banana stem) and Chawli (Red Cow pea) cooked in coarsely ground Coconut Masala and goes well with rice.
The following ingredients are needed to prepare Gabbo Chawli Upkari/ Banana Stem Red Cowpeas Stir Fry.
Ingredients:-
Banana stem/ Gabbo. -2 cup chopped
Red Cowpeas / Chawli. -1/2 cup
Turmeric powder. -1/4tsp
Salt. -to taste
For grinding Coconut Masala:-
Grated Coconut. -1/2cup
Green chillies. -3
Shallots. - 4
Garlic. -2 cloves
For Seasoning:-
Cooking oil. -2tsp
Mustard seeds. -1tsp
Dry Red chillies. -2
Curry leaves. -1spring
Instructions:-
1). Wash and chop Banana stem (Gabbo) into thin round pieces. Then finely chop the Banana stem and keep aside.
2). Wash and pressure cook Red Cowpeas (Chawli) adding 1 and 1/2 cup of water for 2 whistles and keep aside. Chawli should not be over cooked or mashed.
3). Grind grated Coconut, Green chillies, Shallots and Garlic to a coarse paste. Keep aside the coarsely ground Coconut Masala.
4). Broke dry Red chillies into halves and keep aside.
Method:-
1). Heat Coconut oil in a wide bottom pan and splutter Mustard seeds and saute well.
2). Add broken dry Red chillies and Curry leaves into the pan and fry for a second.
3). Add the finely chopped Banana stem (Gabbo) pieces, Turmeric powder and required Salt into the pan and mix well without adding water. Cover and cook for 2 minutes on low flame. Stir in between.
4). Add the cooked Cow peas (Chawli) into the cooking pan and mix with the cooked Banana stem (Gabbo).
5). Add coarsely ground Coconut Masala into the cooking pan and mix with the cooked Banana stem and Red Cow peas. Saute well and cook for 2 minutes on low flame and switch off the flame.
6). Transfer the Gabbo Chawli Upkari / Banana Stem Red Cowpeas Stir Fry to a serving bowl.
