Vaingana Upkari is a tasty and delicious Brinjal Curry goes well as aside dish with rice.
The following ingredients are needed to prepare Vaingana Upkari/ Stir-Fried Brinjal.
Ingredients:-
Purple Brinjal. - 6
Red chilly powder. -1tsp
Coriander powder. -1 and 1/4 tsp
Turmeric powder. -1/4tsp
Hing powder. -1tsp
Salt. - to taste
Urad dal. -1tsp
Mustard seeds. -1tsp
Methi seeds. -1/2tsp
Cooking oil. -2tsp
Instructions:-
1. Remove the stem and wash the Brinjal in water. Chop the Brinjal into little thin lengthy pieces. Soak the chopped Brinjal pieces in water to prevent colour change.
2). Drain the Brinjal pieces and keep them in a mixing bowl. Add Turmeric powder, Red chilly powder, Coriander powder, Hing powder and Salt into the mixing bowl. Mix well all the ingredients in the mixing bowl and keep aside for 10 minutes to marinate.
Method:-
1). Heat oil in a cooking pan and add Urad dal and saute well.Splutter Mustard seeds and Methi seeds and saute well.
2). Add the marinated Brinjal pieces into the cooking pan and mix well on low flame.
3). Add 1/4 cup of water into the cooking pan. Cover and cook the Brinjal pieces till soft. Saute in between to avoid sticking to the bottom.
4). When the Brinjal pieces become soft and the water is absorbed switch off the flame.
5). Transfer the Stir fried Brinjal / Vaingana Upkari to a serving plate.
A very tasty side dish Vaingana Upkari/ Stir fried Brinjal is ready to serve with rice.
