Ulli Vada / Onion Vada


Onion Vada also known as Ulli Vada is a crispy deep fried Onion fritters served as a tea time snack.

The following ingredients are needed to prepare Ulli Vada / Onion Vada.

Ingredients:-

Onion.                      - 2
Gram flour (Besan). -1/2 cup
Rice flour.                 -1/4 cup
Red chilly powder.    -1 tsp
Turmeric powder.      -1/4 tsp
Green chilly.              -1or 2
Ginger (grated).         -1/2 tsp
Curry leaves.             - 1 spring
Salt.                           - to taste
Oil.                             - for deep frying

Instructions:-

1). Peel, wash and chop Onion into very thin lengthy slices. Seperate the slices roughly and keep aside.

2). Remove the outer skin, wash and grate a small piece of Ginger and keep aside.

3). Wash and chop Green chilly into thin round pieces.

4). Wash and finely chop Curry leaves and keep aside.

Method:-

1). In a mixing bowl add thinly chopped Onion slices and sprinkle required Salt all over the Onion slices. Mix well and keep aside for 10 minutes.Then squeeze the Onion slices thoroughly with your hands.

2). Add grated Ginger, thinly chopped Green chilly roundels and finely chopped Curry leaves into the mixing bowl and mix with the Onion slices. Mix together all the ingredients in the mixing bowl using your hands and keep aside for a minute.

3). Add Kashmiri Red chilly powder, Turmeric powder and Hing powder into the mixing bowl and mix with the Onion slices . 


4). Add Gram flour and Rice flour little by little into the mixing bowl and mix with the Onion slice mixture.No need to add water.Onion will release its own juice. Check for Salt.(If the batter is too dry sprinkle very little water (1 or 2 tbsp) and mix well).

5). Combine all the ingredients in the mixing bowl together and make a thick and sticky batter.

6). Heat oil in a deep frying pan on high flame.Once the oil is hot reduce the heat to medium flame.

7). Scoop out a little batter with a spoon or wet your hand and pinch out a small portion of the batter in your hand. Gently drop into the hot oil  without any shape and deep fry in batches till crisp and golden brown colour.

8). Stir occasionally and flip over the Onion Vadas / Ulli Vadas in hot oil with a slotted spoon to cook on all sides.

9). Remove the deep fried crispy Onion Vada / Ulli Vada from hot oil with slotted spoon and keep them on a kitchen towel to absorb the excess oil.Deep fry the remaining batter till golden colour and crisp in batches.


10). Transfer the deep fried  Ulli Vada /Onion Vada to a serving plate.

A tasty and crispy Ulli Vada / Onion Vada is ready to serve with Tomato Ketch up or Tomato Sauce as a tea time snack.
