Karathe Ambade Gashi (Bitter gourd Hog plum Curry)


Karathe Ambade Ghashi is a coconut based GSB Konkani curry made with Bitter gourd (Karathe) and Hog plum (Ambade) goes well with rice.Karate Ambade Ghashi recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Karathe Ambade Gashi / Bitter gourd Hog plum Curry.

Ingredients:-

Bitter gourd (Karathe). - 1big
Hog plum (Ambade).    - 2 or 3
Salt.                               - to taste

For grinding Coconut Masala paste:-

Grated Coconut.   -1 cup
Red chillies.          -7
Coriander seeds.   -1tbsp
Urad dal.               -1tbsp
Methi seeds.         -10 seeds only
Turmeric powder. -1/4tsp

For Seasoning:-

Coconut oil.     -1tsp
Mustard seeds. -1tsp
Curry leaves.    -1spring

Instructions:-

1). Wash Bitter gourd (Karathe) in water and chop into halves lengthwise. Remove the seeds and again chop the Bitter gourd into 1 inch lengthy pieces. Apply little Salt and keep aside to marinate.



2). Wash the Hog plums (Ambade) and crush gently with mortar and pestle. Apply little Salt and keep aside.


3). Heat 1/2 tsp Coconut oil in a pan and roast Red chillies and keep aside. In the same pan add Coriander seeds and roast for a minute and keep aside. Add Urad dal and Methi seeds in the same pan and roast together till Urad dal change its colour. Switch off the flame and keep aside all the roasted ingredients to cool.


4). Grind grated Coconut along with all the roasted ingredients and Turmeric powder to a smooth paste adding very little water. Keep aside the ground Coconut Masala paste.

Method:-

1). In a cooking pan or kadai add the Bitter gourd (Karathe) pieces, crushed Hog plum (Ambade), required Salt and 2 cup of water. Boil and cook the Bitter gourd and Hog plums till soft on low flame.


2). Add ground Coconut Masala paste into the cooking pan and mix with the cooked Bitter gourd rushed Hog plums.

3). Boil and cook on low flame till the ground Coconut Masala paste nicely mix with the Bitter gourd pieces. Add water to make the curry to a semi thick consistency. Boil well and switch off the flame.

4). Heat Coconut oil in a small pan for seasoning and splutter Mustard seeds and saute well. Add Curry leaves and fry in oil for a second and switch off the flame.

5). Pour the above seasoning into the curry in the cooking pan and mix well.

6). Transfer the bitter gourd hog plum curry to a serving bowl.

A tasty Karathe Ambade Gashi (Bitter gourd Hog plum Curry) is ready to serve with rice.
