Karathe Thambale Puddi (Bitter Gourd Chutney Powder)


Bitter gourd Chutney Powder (Karathe Tambali Puddi in Konkani ) is a healthy and delicious side dish made using bitter gourd, lentils and spices, goes well with steamed rice, dosa, idli etc. Bitter gourd chutney podi recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Bitter Gourd Chutney Powder / Karathe Thambale Puddi.

Ingredients:-

Bitter gourd (Karathe).-1 big size
Grated Coconut.          -1 cup
Urad dal.                      - 1/4 cup
Toor dal.                       -1/4 cup
Dry Red chillies.          - 6
Coriander seeds.           -1tbsp
Cumin seeds.                -1tsp
Curry leaves.                -2 or 3spring
Tamarind.                     - a gooseberry size
Jaggery.                        -1tbsp
Hing powder.                -1/2tsp
Salt.                              - to taste 
Coconut oil.                  - 3 tsp
Instructions:- 

1). Wash the Bitter gourd (Karathe) thoroughly and cut it into 2 halves vertically and remove the seeds. Grate the Bitter gourd and apply little Salt and mix well. Keep aside on a plate. Clean the Curry leaves and keep aside on a plate.



2). Heat 2tsp Coconut oil in a pan. Add the grated Bitter gourd into the pan and roast well till golden brown. Add Curry leaves into the pan and roast along with Bitter gourd. Switch off the flame and keep the roasted Bitter gourd and Curry leaves on a plate to cool.

3). Keep aside Urad dal, Red chillies, Toor dal, Coriander seeds and Cumin seeds along with Tamarind and Jaggery.

4). Heat 1tsp Coconut oil in a pan. Add Urad dal, and Toor dal and roast on low flame for 2 minutes.Add dry Red chillies and roast along with the lentils. Add Coriander seeds and Cumin seeds into the pan and roast along with the roasted Urad dal, Toor dal and Red chillies till the lentils become golden brown.Transfer all the roasted ingredients in the pan on a plate to cool.

 
5). In the same pan add grated Coconut and roast till golden brown and keep aside.


Method:-

1). In a mixer grinder add all the roasted ingredients (roasted Urad dal, Toor dal, Red chillies, Coriander seeds, Cumin seeds, Coconut, roasted Bitter gourd and Curry leaves) along with Tamarind, Jaggery, Hing powder and required Salt and grind together to a dry and coarse powder. 

2). Transfer the ground Bitter gourd chutney powder to a plate and let it cool completely.

3). When cooled completely keep the Bitter gourd Chutney powder to a serving bowl. Now the Bitter gourd Chutney powder is ready to use.


4). Store the Bitter gourd Chutney powder in a clean and dry bottle and close with a lid for further use.



5). Always use clean and dry spoon to take out the Bitter gourd chutney powder from the bottle for better shelf life.Bitter gourd chutney powder lasts for 2 weeks or you can store it in the fridge.
