Onion Coconut Stir Fry.


Onion coconut stir fry is a delicious side dish made with thinly sliced onion and freshly grated coconut, goes well as a side dish with steamed rice. A simple and easy to make onion coconut stir fry recipe is given with step by step method and photos .

The following ingredients are needed to prepare Onion Coconut Stir Fry.

Ingredients:-

Onion.                -1big
Grated Coconut. -1/2 cup
Green chillies.    -3
Ginger.                - a small piece
Tomato.               -1
Salt.                     -to taste

For Seasoning:-

Coconut oil.     - 2 tsp
Mustard seeds. -1tsp
Curry leaves.    - 1spring

Instructions:-

1). Peel, wash and chop Onion into thin long slices and keep aside.

2). Freshly grate Coconut and keep aside.

3). Wash and chop Green chillies into small round slices and keep aside.

4). Peel the outer skin, wash the Ginger and chop into very small pieces. Keep aside.

5). Wash and chop Tomato into 1 inch long thin slices and keep aside.

6)). Keep aside the freshly grated Coconut, thinly chopped Onion slices, chopped Green chilly pieces, chopped Ginger pieces and chopped Tomato slices on a plate.


Method:-

1). Mix together freshly grated Coconut, thinly chopped Onion slices, chopped Green chilly pieces and chopped Ginger pieces along with 1tsp Salt thoroughly with your hands and make a soft mixture. Keep aside the Onion Coconut mixture.


2). Heat Coconut oil in a pan and splutter Mustard seeds and saute well. Add Curry leaves and fry well.


3). Add the Onion Coconut mixture into the pan. Add chopped Tomato slices into the pan and mix with the Onion Coconut mixture.



4). Sprinkle 2tbsp of water and mix well all the ingredients.Cover and cook the onion coconut tomato mixture on low flame.

5). Open the lid and saute well all the ingredients till the water is absorbed and the mixture becomes dry.Switch off the flame.


6). Transfer the Onion Coconut Stir Fry to a serving plate or a serving bowl.

A very tasty Onion Coconut Stir Fry is ready to serve with steamed rice.
