Banana Kinnathappam


Banana kinnathappam is a sweet snack made with ripe nendran banana, wheat flour, jaggery, coconut and cashew nuts.

The following ingredients are needed to prepare Banana Kinnathappam.

Ingredients:-
Jaggery grated.            -1/3 cup
Water.                          -1/2 cup
Ripe nendran banana . -1 (firm)
Cashew nuts.                - 5
Grated coconut.            -1/3 cup
Wheat flour.                  -1/2cup
Ghee.                             - 1tbsp
Salt.                               - a pinch

Instructions:-

1). In a small pan add grated jaggery and 1/2 cup of water and boil well till the jaggery dissolves in water. Filter the melted jaggery to remove the impurities and keep aside the jaggery liquid.

2). Peel and chop ripe nendran banana into small pieces.Chop cashew nuts into small pieces Heat ghee in a pan and fry the chopped cashew nuts. Add chopped banana pieces into the pan and saute well until the banana pieces become soft. Add grated coconut into the pan and stir well.Mix the banana coconut cashew nut mixture on medium flame and switch off the flame.

Method:-

1). In a mixing bowl add wheat flour and jaggery liquid and mix well without lumps. Add the ghee  fried banana coconut cashew nut mixture into the bowl. Add required water and a pinch of salt into the bowl.Mix all the ingredients in the bowl and make a thick batter.

2). Grease a pan with little ghee and pour the thick batter into the greased pan.

3). Keep the pan in a steamer vessel and steam cook the batter for 15 minutes on medium flame.Once the batter is cooked remove the pan from the steamer and allow the banana kinnathappam to cool.

4). Transfer the steam cooked banana kinnathappam to a serving plate.

5). Cut the delicious banana kinnathapam into desired shape and serve as a sweet snack.
