Brinjal Potato Tomato Masala Gravy


Brinjal potato tomato masala gravy is a delicious and semi thick brinjal potato tomato curry goes well with chapati, phulka, roti and rice. Brinjal potato tomato masala gravy recipe is given below with step by step photos.

The following ingredients are needed to prepare Brinjal Potato Tomato Masala Gravy.

Ingredients:-

Brinjal.                  -3 medium size
Potato.                   -2 medium size
Tomato.                  -2
Onion.                    -1 big
Ginger garlic paste.-1tbsp
Turmeric powder.   -1/4 tsp
Red chilli powder.  -1tsp
Coriander powder.  -1tsp
Garam masala.        -1tsp
Mustard seeds.        -1tsp
Cumin seeds.           -1/2 tsp
Water.                       -1 cup
Salt.                          - to taste
Oil.                            -2 tbsp

Instructions:-

1). Peel, wash and chop potato into medium size cubes. Boil the chopped potato in enough water till soft and keep aside.

2). Wash and chop brinjal into medium size cubes and keep them in water to prevent from blackening

.3). Wash and finely chop tomato. Peel, wash and finely chop onion and keep aside.

Method:-

1). Heat oil in a wide bottom pan and splutter mustard seeds and cumin seeds.Add ginger garlic paste into the pan and saute in oil.Add finely chopped onion and required salt into the pan and saute well till onion becomes soft and translucent.

2). Add finely chopped tomatoes and saute well. Cover and cook till tomato becomes soft and mushy. Saute well in between.

3). Add red chilli powder, turmeric powder and coriander powder into the pan and mix well.

4). Add chopped brinjal into the pan.

5). Add 1 cup of water into the pan and mix well. Cover and cook the brinjal pieces on medium flame until soft and tender.

6). Add cooked potato cubes into the pan and mix with the cooked brinjal pieces and boil on low flame.

7). Add garam masala powder into the pan and mix well.

 8).The curry will thicken once it cools.Add enough water and adjust the curry to make a semi thick gravy consistency. Cook for 2 minutes on low flame and switch off the flame.


A very tasty Brinjal Potato Tomato Masala Gravy is ready to serve hot with chapati, phulka, roti and rice.
