Beetroot and Dates Pickle.

Beetroot and dates pickle is a tasty and easy to make pickle and can be served along with biriyani, pulavu, fried rice or ghee rice. Beetroot and dates pickle is very famous in Kannur in north Kerala. Beetroot and Dates Pickle recipe is given below with step by step photos.

The following ingredients are needed to prepare Beetroot and Dates Pickle.

Ingredients:-

Dates.                -15 to 18
Beetroot.            -1
Carrot.                -1 small
Ginger chopped. -1/4 cup
Garlic chopped.  -1/4 cup
Green chillies.     -8
Curry leaves.        -few
Vinegar.                -1/4 to 1/2 cup
Warm water.         -1/2 cup
Mustard seeds.      -1tsp
Dry red chilly.       -2
Fenugreek /methi. -1/4tsp
Fenugreek powder.-1/4tsp
Red chilly powder. -1tsp
Turmeric powder.   -1/4tsp
Asafoetida.             -1tsp
Salt.                        - to taste
Gingelly oil.           - 4 tbsp

Instructions:-

1). Take 15 or 18 dates and soak the dates in warm water for 30 minutes.


2). Peel and grate beetroot and carrot.Slit green chillies.Finely chop ginger and garlic.Keep aside the chopped ingredients along with few curry leaves and soaked dates.


3). After 30 minutes, grind the soaked dates into paste along with warm water and keep aside.

 Method:-

1). Heat gingelly oil in a wide bottom steel kadai. Splutter mustard seeds and fenugreek seeds.Add dry red chillies and curry leaves and saute well. Add slit green chillies, chopped ginger and chopped garlic and saute well till raw smell goes. Add grated carrot and grated beetroot into kadai.Saute well and cook until soft.


2). Add ground paste of dates into the kadai and mix well. Add required salt, fenugreek powder, turmeric powder, red chilly powder, asafoetida and mix well.Cook for 2 minutes on low flame.

3). Add vinegar and balance the taste of the pickle and switch off the flame.

4). Transfer the beetroot and dates pickle to a clean bowl.

Very tasty Beetroot and Dates Pickle is ready to serve.
