1). For Horse Gram Dosa Batter.
Ingredients:-
Horse gram. -1 cup
Raw rice. -3 cup
Water. - as required
Salt. - to taste
Instructions:-
Wash and soak horse gram and rice in water for 5 hours.Then drain soaked water and grind soaked horse gram to a thick batter adding little water.Grind soaked raw rice to a smooth batter adding little water. Transfer both ground batters in a bowl. Add required salt and mix both the batters together using your hand. Keep aside the horse gram batter to ferment for 8 hours.
Ingredients:-
Beetroot. -1
Potato. -2
Onion. -2
Ginger chopped. -1tsp
Green chilly. -3
Lemon. -1/2
Curry leaves. -few
Mustard seeds. -1tsp
Cumin seeds. -1tsp
Fennel seeds. -1tsp
Channa dal. -1/2 tsp
Urad dal. -1tsp
Dry red chilly. -2
Salt. -to taste
Oil. -1tbsp
Turmeric powder.-1/4 tsp
Chilly powder. -1tsp
Asafoetida. -1/2 tsp
Water. -as required
Instructions:-
(1). Boil, peel and mash potato and beetroot.Finely chop onion and ginger, Slit green chillies. Keep the above ingredients on a plate along with half of lemon, few curry leaves, mustard seeds, cumin seeds, fennel seeds, urad dal, chana dal and dry red chillies.
(2). Heat oil in a pan and add urad dal, chana dal, mustard seeds, cumin and fennel seeds.Once splutters add broken dry red chillies and saute well. Add slit green chillies, curry leaves, chopped ginger and saute well.Add finely chopped onions and saute well. Add turmeric powder, red chilly powder, salt, asafoetida and mix well.
(3). Add mashed beetroot and potato mixture and little water into the pan and mix well. Adjust salt.Add lemon juice and mix with all the ingredients in the pan and switch off the flame.
(4). Transfer the beetroot masala to a bowl.Now Beetroot Masala is ready for stuffing.
Horse Gram Beetroot Masala Dosa.
(1). Mix the fermented horse gram dosa batter with a ladle.
(2). Heat a dosa tawa and pour a ladle of horse gram dosa batter on hot tawa.Spread the batter thinly on tawa using the back of the ladle and make a thin large horse gram dosa. Cover and cook dosa on low flame.
(3). Once the base of the horse gram dosa is roasted well, keep a big spoon of beetroot masala on one side of the roasted horse gram dosa.
(4). Fold the roasted horse gram dosa to one side using a flat spatula and cover the masala stuffing.
(5). Transfer the horse gram beetroot masala dosa to a plate.
A very tasty and healthy Horse Gram Beetroot Masala Dosa is ready to serve hot with or without chutney.
