Potato and Tomato Curry

Potato and tomato curry is a very tasty and easy to make good side dish for chapathi, phulka, idiyappam, puttu, appam and steamed rice.

The following ingredients are needed to prepare Potato and Tomato Curry.

Ingredients:-

Potato.            - 1large
Onion.             - 1large
Tomato.           - 2
Green chillies. - 4
Mustard seeds. -1tsp
Curry leaves.    -1sprig
Salt.                  - to taste
Water.               -as required
Coconut oil.      -2tsp
Turmeric powder.-a pinch

Instructions:- 

Chop and remove the outer skin of potato. Chop the potato into small pieces, wash well and keep aside.Peel the outer skin of onion, wash well and chop into thin lengthy slices and keep aside.Wash tomatoes and chop into small pieces and keep aside.Wash and slit green chillies and keep aside.

Method:-

1). Heat coconut oil in a pan and splutter mustard seeds. Add slit green chillies and curry leaves into the pan and saute well.

2). Add thinly sliced onion into the pan and saute well till translucent.

3). Add chopped tomatoes into the pan and saute well till soft and mushy.

4). Add chopped potato into the pan and saute well.Add required salt,a pinch of turmeric powder and 1/2 cup of water and boil well. Cover and cook until potato becomes soft. Saute well in between. Once the potato is cooked switch off the flame and transfer the curry to a serving bowl.

Very tasty and easy to make Potato and Tomato Curry is ready to serve hot with chapati, phulka, idiyappam, puttu, appam or steamed rice.
