Banana Flower and Drumstick Leaves Stir Fry / Bondi ani Mashinga Palle Upkari


Banana flower Drumstick leaves Stir fry also known as Bondi ani Mashinga palle Upkari in Konkani is a healthy and delicious stir fry made with banana flower and drumstick leaves. Banana flower is called bondi and drumstick leaves are called mashinga palle in Konkani.

The following ingredients are needed to prepare Banana Flower Drumstick Leaves Stir Fry /Bondi ani Mashinga Palle Upkari.

Ingredients:-

Banana flower.     -1medium
Drumstick leaves.-1/2 cup
Onion.                  -1big
Green chillies.      -2
Garlic.                  -5
Grated coconut.   -1/4 cup
Raw rice.             -3 tsp
Urad dal.             -1tsp
Mustard seeds.    -1tsp
Dry red chillies.  -2
Garlic.                 -5 cloves.
Coconut oil.        -2 tsp
Salt.                     - to taste

Turmeric powder.-1/4 tsp

Instructions:-

1) Finely chop banana flower and keep them in water to prevent discoloration.

2). Seperate the drumstick leaves from its branches and remove the tiny branches attached to the leaves. Wash the cleaned drumstick leaves and drain water completely and keep aside.

3). Dry roast raw rice in a pan on low flame till nice aroma comes out and grind to a coarse powder.

4). Wash and chop green chillies into thin round pieces and keep aside.

5). Peel, wash and finely chop onion and keep aside.

Method:-

1). Heat coconut oil in a pan and add urad dal and saute well. Splutter mustard seeds and saute well.

2). Add chopped garlic and chopped ginger into the pan and saute well.

3). Add broken dry red chillies and saute well.

4). Add chopped green chilly pieces and saute well in oil.

5). Add finely chopped onion and saute well till the onion becomes translucent.

6). Add finely chopped banana flower into the pan and saute well.Cover and cook the chopped banana flower till soft without adding water.

7). Add required salt and turmeric powder into the pan and mix well.

8). Add drumstick leaves into the pan and mix with cooked banana flower pieces.Saute for a minute.

9). Add coarsely ground rice powder into the pan and mix well.

10). Lastly add grated coconut and mix with all the ingredients in the pan and switch off the flame.

A very tasty and healthy Banana flower Drumstick leaves Stir fry / Bondi ani Mashinga palle Upkari is ready to serve as a side dish with steamed rice.
