Pathrode upkari is a very tasty and delicious pathrode stir fry. Pathrode stir fry is made with left over pathrodo pieces and can be served as a side dish with steamed rice for lunch or dinner or as a snack with tea or coffee.You can make stir fry with freshly made cooled pathrodo pieces also.Pathrodo is a konkani dish made with taro leaves or colocasia leaves. Large tender taro leaves or colocasia leaves are stuffed in layers with ground batter of rice, coconut, dry red chilies, tamarind and salt mixture and rolled the stuffed leaves together into cylindrical shape and tied with a thread and steamed in a steamer till cooked.
The following ingredients are needed to prepare Pathrode Upkari /Pathrode Stir Fry.
Ingredients:-
Pathrodo chopped. -2 or 3 cup
Mustard seeds. -1tsp
Dry red chilly. -1
Curry leaves. -1sprig
Coconut oil. -2 tbsp
Instructions:-
Chop
the left over pathrodo into pieces. Then pinch the chopped pathode
pieces into very small pieces using your hand. Broke dry red chilly into
small pieces.
Method:-
1). Heat 2 tbsp coconut oil in a
wide bottom pan. Once the oil is hot splutter mustard seeds.Add broken
dry red chilly pieces and curry leaves into the pan and fry in oil for a
second.
2). Add pinched pathrodo pieces into the pan and saute
well.Cover and roast the pathrodo pieces on medium flame until it
becomes little crispy.
(If the pathrodo you made feels itching you can add little tamarind water at this stage and saute well).
3). Toss once in a while to prevent it from sticking to the bottom.
4).Once the pathrodo pieces become crispy switch off the flame and remove from heat.
A
very tasty Pathrode Upkari / Pathrode Stir Fry is ready to serve hot
with steamed rice for lunch or dinner or as a evening snack with a cup
of hot tea or coffee.
