Eggless Sponge Cake Without Baking Powder


 Eggless sponge cake is a soft and tasty cake made without adding egg, baking powder and baking soda. Eggless Sponge Cake Without Baking Powder recipe is given below with step by step photos.

The following ingredients are needed to prepare Eggless Sponge Cake Without Baking  Powder.

Ingredients:-

Maida.           -2 cup
Sugar.            -3/4 cup
Oil.                -1/2 cup
Eno fruit salt.-1 tsp
Milk.             -1 cup +1/2 cup

Instructions:-

Grease a cake tin with little sunflower oil and spread little maida over it and shake it to spread maida in uniform layer all over inside the cake tin and keep aside.

Method:-

1). In a mixer grinder add 3/4 cup sugar and blend to a smooth powder. Add 1/2 cup sunflower oil and one cup boiled and cooled milk and blend together to a creamy paste texture.

2). Transfer the creamy paste to a mixing bowl.

3). Add maida little by little into the mixing bowl and mix the creamy paste with a flat spatula without lumps using cut and fold method. If the batter is thick add milk (about 1/2 cup) little by little into the bowl in between mixing.

4). Add 1tsp or 1 sachet of Eno fruit salt into the mixing bowl.

5). Slowly mix the cake batter and Eno fruit salt without lumps.

6). Transfer the cake batter to the greased cake tin and gently tap the cake tin to level the cake batter and to remove the air bubbles in the cake batter.

7). Preheat oven at 180 degree C for 10 minutes. Place the cake tin in preheated oven and bake the cake at 180 degree C for 40 minutes.
 

8). Once done remove the cake tin from oven and allow the cake to cool completely. Once cooled  demold the cake from cake tin and transfer to a serving plate.


9). Decorate the cake top with colourful gems chocolates or toasted nuts.

Raw Mango Carrot Onion Salad.


 Raw mango carrot onion salad is a very tasty and easy to prepare salad adding ginger and coriander leaves goes well with rice or chapati.

The following ingredients are needed to prepare Raw Mango Carrot Onion Salad.

Ingredients:-

Raw Mango. -1
Carrot.           -1
Onion.           -1
Ginger.          -a small piece
Green chilly. -1
Salt.              - to taste
Coriander leaves. -few

Instructions:-

Peel and chop raw mango, carrot, onion and ginger into thin lengthy slices. Chop green chilly into very thin round pieces. Finely chop coriander leaves.

Method :-

In a mixing bowl add thinly chopped green chilly and required salt and mix well using your hand. Add lengthy slices of raw mango, carrot, onion and ginger into the bowl and mix well. Add finely chopped coriander leaves and mix everything.

Raw mango carrot onion salad is ready to serve.

Pacha Manga Pachadi / Raw Mango Pachadi

 Pacha manga pachadi / Raw mango pachadi is a very tasty and easy to prepare traditional Kerala dish made with raw mango and grated coconut adding mustard seeds and curd. Pacha manga pachadi is served as a side dish with rice.

The following ingredients are needed to prepare Pacha Manga Pachadi / Raw Mango Pachadi.

Ingredients:-

Raw mango.     -1
Grated coconut.-3/4 cup
Green chillies.  -3
Mustard seeds. -1/2 tsp
Curd.                -1/2 cup
Salt.                  - to taste

For Seasoning:-

Mustard seeds.-1/4tsp
Dry red chilly. -1
Curry leaves.   -few
Coconut oil.    -1tsp

Instructions:-

1). Wash raw mango. Peel and remove the outer green skin and chop the raw mango into small pieces.

2). Grind the chopped raw mango pieces along with grated coconut, green chillies, mustard seeds adding curd and required salt to a smooth paste in a mixer grinder. Keep aside the ground raw mango mixture.

Method:-

1). In a bowl add the ground raw mango coconut green chilly mustard curd mixture and mix well.

2). Heat 1tsp coconut oil in a small pan for seasoning and splutter mustard seeds. Add 1 dry red chilly and few curry leaves into the pan and fry in oil for a second and switch off the flame.

3). Pour the seasoning into the bowl and mix the ground raw mango mixture.

Very tasty Pacha Manga Pachadi / Raw Mango Pachadi is ready to serve as a side dish with rice. 

Eggless Wheat Banana Jaggery Cake Baked In Pressure Cooker.


 Wheat banana jaggery cake is an eggless cake baked in a pressure cooker. A very easy to prepare delicious cake using wheat flour, jaggery, ripe small bananas adding black raisins. Eggless Wheat Banana Jaggery Cake In Pressure Cooker recipe is given below with  photos.

The following ingredients are needed to prepare Eggless Wheat Banana Jaggery Cake In Pressure Cooker.

Ingredients:-

Wheat flour.         -1cup
Small ripe banana.-5
Cinnamon powder.-1tsp
Baking powder.     -1tsp
Baking soda.          -1/4 tsp
Grated Jaggery.      -1/2 cup
Sunflower oil.        -1/4 cup
Curd.                      -1tbsp
Black raisins.         - few
Boiled and cooled Milk.- as required

Instructions:-

1). Sieve wheat flour, baking powder and baking soda together. Add cinnamon powder into the sieved wheat flour and mix well with a fork. Keep aside the wheat flour cinnamon powder mixture.

2). Peel and chop ripe small bananas into small round pieces and mash well.

Method:-

1). In a mixing bowl add mashed ripe small banana, grated jaggery, oil and beat well with a beater. Add whisked curd into the bowl and beat again to make a creamy consistency. Add wheat flour cinnamon powder mixture into the bowl and mix well with a spatula and make a cake batter. Add required quantity of milk into the cake batter to moist it.

2). Grease a round cake pan with little oil. Pour the cake batter into the greased cake pan and slowly tap the cake pan to remove the air bubbles in the batter. Add black raisins over the cake batter.

3). Preheat pressure cooker on medium flame for 10 minutes closed with cooker lid and without putting weight and gasket on the lid. Then open the lid and keep a steel ring stand inside the preheated pressure cooker. Place the cake pan with cake batter on it and cover the cooker with its lid.(Don't put weight and gasket on the cooker lid). Cook the cake for 40 minutes on low flame.Then switch off the flame and open the cooker lid. Keep the hot cake pan with baked cake in the cooker for 10 minutes.Insert a toothpick in the center of the baked cake in the cooker and if the tooth pick inserted into the cake comes out clean then the cake is baked well.

4). Remove the cake pan from pressure cooker and allow the baked eggless wheat banana jaggery cake to cool.

5). Once cooled demould the baked eggless wheat banana jaggery cake from the cake pan and transfer to a plate.
 

6). Eggless Wheat Flour Banana Jaggery Cake Baked In Pressure Cooker is ready to cut into desired slices and serve.
