Jackfruit Seeds Cashew Nuts Coconut Masala Curry


Jackfruit seeds cashew nuts masala curry is a very easy to prepare coconut masala curry and can be served with rice. Jackfruit seeds cashew nuts coconut masala curry recipe is given below with step by step photos.

The following ingredients are needed to prepare Jackfruit Seeds Cashew Nnuts Coconut Masala Curry.

Ingredients:-

Jackfruit seeds.     - 25
Cashew nuts.         -20
Raw mango.          -1 small
Turmeric powder.  -1/4 tsp
Red chilly powder.-1tsp
Water.                    - as needed
Salt.                       - to taste

For grinding Coconut Masala Paste:-

Grated coconut. -1 cup
Green chilly.      -1
Shallots.             -2
Cumin seeds.     -1/2 tsp

For Seasoning:-

Mustard seeds.-1tsp
Dry red chilly. -1
Shallots.          -6
Curry leaves.   -few
Coconut oil.    -1tsp

Instructions:-

1). Peel and remove the white outer skin of jackfruit seeds and soak the jackfruit seeds in water overnight. Next day scrap and remove the brown outer skin of soaked jackfruit seeds and chop each jackfruit seeds into lengthy pieces. 2). Remove the outer green skin of raw mango and chop the raw mango into small pieces. 3). Peel the outer skin of 8 shallots and chop the peeled 6 shallots into thin lengthy slices. Keep aside.

Method:-

1). In a cooking vessel add the chopped jackfruit seeds, required water, required salt and mix well. Cover and cook the jackfruit seeds till soft. Add chopped raw mango pieces, turmeric powder and red chilly powder into the cooking vessel and mix well.Cover and cook the raw mango pieces on low flame.

2). In a small mixie jar add grated coconut, green chilly, 2 shallots and cumin seeds and grind to a smooth paste adding very little water.

3). Pour the ground coconut masala paste into the cooking vessel.Add little water and mix with the cooked jackfruit seeds and raw mango pieces.


4). Boil the cashew nuts in enough water for 5 to 10 minutes on medium flame. Then switch off the flame and allow the boiled cashew nuts to soak in the boiled water for 10 minutes to become soft. Drain water and halve the boiled cashew nuts.

 5). Add the halved cashew nuts into the cooking vessel.
 

6). Mix the halved cashew nuts with cooked jackfruit seeds and mango pieces in the cooking vessel using a ladle.

 

 7). Mix well and boil the jackfruit seeds cashew coconut masala curry on low flame for 2 minutes and stir well in between. Switch off the flame.

 

8). Heat 1tsp coconut oil in a small pan for seasoning and splutter mustard seeds. Add dry red chilly into the pan and saute in oil. Add thinly chopped shallot slices into the pan and fry in oil. Add curry leaves and fry for a second and switch off the flame. Pour the seasoning into the cooking vessel and mix with the jackfruit seed cashew masala curry.

 

9). Transfer the jackfruit seeds cashew nut coconut masala curry to a serving bowl.
