Bombay Potatoes Recipe

Bombay potatoes recipe is a very tasty and easy to prepare side dish made with boiled and peeled bombay potatoes and spice powders.Bombay potatoes can be served with chapathi, phulka and also with rice.

The following ingredients are needed to prepare Bombay Potatoes Recipe.

Ingredients:-

Bombay potato.    -300 gm
Cumin seeds.        -1tsp
Turmeric powder. -1/2 tsp
Red chilly powder. -1tsp
Coriander powder.-1tbsp
Cumin powder.     -1/2 tsp
Garam masala.      -1/2 tsp
Amchur powder.   -1tsp
Salt.                       -to taste
Cooking oil.          -2 tbsp

Instructions:-

Wash and boil bombay potatoes / baby potatoes in water with skin adding little salt. Once cooled peel the outer skin of boiled bombay potatoes and keep aside.

Method:-

1). Heat 2tbsp cooking oil in a pan and splutter cumin seeds.

2). Lower the flame and add turmeric powder, red chilly powder, coriander powder, cumin powder and garam masala powder into the pan and mix well.

3). Add boiled and peeled bombay potatoes and 1/2 tsp salt into the pan and toss the baby potatoes in spice powders.

4). Add amchur powder into the pan and mix well. Saute the bombay potatoes and cook on low flame till the spice powders nicely coated to the boiled bombay potatoes. Switch off the flame.

5). Transfer the spice powders coated bombay potatoes into a serving bowl.

Very tasty and spicy Bombay Potatoes are ready to serve hot with chapathi, phulka and also with rice.

Boiled Sweet Potatoes


Sweet potato is a root vegetable. Boiled sweet potatoes are healthier, highly nutritious, rich in vitamin A, rich in fiber which lowers cholesterol and good for weight loss.

The following ingredients are needed to prepare Boiled Sweet Potatoes.

Ingredients:-

Sweet Potato.-250 gm
Water.            -as required
Salt.               -to taste

Instruction:-

Wash sweet potatoes thoroughly in water and remove the clay and dust from it.

Method:-

1). In a wide bottom pan add washed sweet potatoes with skin, little salt, enough water to cook and cover the pan with a lid.Boil and cook the sweet potatoes till soft. Switch off the flame and drain the boiled water completely and allow the boiled sweet potatoes to cool.

2). Once cooled peel and remove the outer skin of boiled sweet potatoes. Cut the boiled potatoes into thick round pieces.

Very tasty Boiled Sweet Potatoes are ready.

Irumban Puli Achar / Bilimbi Garlic Pickle


Irumban puli achar also known as chemeen puli achar in Kerala is made with bilimbi fruits. Bilimbi Fruit is called Irumban Puli and Chemeen Puli in Kerala.

The following ingredients are needed to prepare Irumban Puli Achar / Chemeen Puli Achar / Bilimbi Garlic Pickle.

Ingredients:-

Bilimbi fruits.       - 35 or 40
Garlic cloves.        -20
Mustard seeds.      -2 tsp
Fenugreek seeds.  -1tsp
Red chilly powder.-2 or 3 tbsp
Turmeric powder.  -1tsp
Asafoetida.            -1tbsp
Vinegar.                 -1tsp
Salt.                        -to taste
Oil.                         -4 tbsp

Instructions:-

1). Wash fresh bilimbi fruits (irumban puli / chemeen puli) in water and pat dry it with a clean cloth. Chop and remove both the ends of each bilimbi fruits and cut bilimbi into small round pieces. In a glass bowl add chopped bilimbi fruits and 2tbsp salt and mix well with a spoon. Keep aside the salted bilimbi fruits to marinate for 30 minutes.

2).Peel and chop garlic cloves into thin lengthy pieces.

Method:-

1). Heat 4 tbsp oil in wide bottom kadai and splutter mustard seeds and fenugreek seeds (methi seeds).

2). Add chopped garlic cloves into the kadai and saute well till it turns slight golden colour.

3). Drain salt water and add the marinated bilimbi fruits and 1tbsp salt into the kadai and saute in oil for 5 minutes on low flame.

4). Add turmeric powder, red chilly powder, asafoetida (hing powder) into the kadai and mix with the bilimbi fruits.

5). Add 2 tsp vinegar into the kadai and mix with the spicy bilimbi mixture. Once the bilimbi mixture becomes little thick switch off the flame. Remove the kadai from flame.

6). Transfer the pickle to a porcelain bowl and keep aside to cool. Once the pickle is cooled transfer it to a glass bottle. Add 1tsp vinegar over the pickle and close the glass bottle with airtight lid and it stays good.You can also keep the irumban puli achar / bilim garlic pickle bottle in the refrigerator.

Irumban Puli Achar/ Chemeen Puli Achar / Bilimbi Garlic Pickle is ready.

White Bitter Gourd Coconut Curry


 White bitter gourd coconut curry is a very tasty and easy to prepare coconut masala curry made with white bitter gourd and spices adding bilimbi fruits.White bitter gourd coconut curry goes well with rice.

The following ingredients are needed to prepare White Bitter gourd Coconut Curry.

Ingredients:-

White Bitter gourd. -2
Onion.                     -1
Salt.                         -to taste
Water.                      -as required
Coconut oil.            -2 tsp

For grinding Coconut Masala Paste:-

Grated coconut. -3/4 cup
Dry red chillies. -5
Urad dal.            -2 tsp
Coriander seeds.-1tbsp
Fenugreek seeds.-1/2 tsp
Bilimbi fruits.     -5
Coconut oil.        -1tsp

Instructions:-

1). Heat 1tsp coconut oil in a pan and roast urad dal, dry red chillies, coriander seeds and fenugreek seeds on low flame. Once cooled grind the roasted ingredients along with bilimbi fruits and grated coconut to a smooth paste without adding water. Keep aside the ground coconut paste.

2). Wash and cut the white bitter gourd into 2 halves lengthwise and remove the seeds. Chop the white bitter gourd into small pieces.

3). Peel and chop onion into thin lengthy pieces.

Method:-

1) Heat 2tsp coconut oil in a wide bottom pan. Add thinly chopped onion and saute well until onion turns slightly brown in colour.

2). Add chopped white bitter gourd pieces and required salt into the pan and fry in oil on low flame.

3) Add 1cup of water into the pan. Boil and cook white bitter gourd pieces till soft.

4) Add ground coconut masala paste into the pan and mix well and cook till it boils on low flame. Switch off the flame.

5). Transfer the white bitter gourd coconut curry to a serving bowl.

White Bitter gourd Coconut Curry is ready to serve hot with rice.

Nendran Elayada


 Nendran ealayada is tea time snack made with raw rice, ripe nendran banana (ripe Kerala banana), grated jaggery, and grated coconut.Nendran Elayada recipe is given below with step by step photos.

The following ingredients are needed to prepare Nendran Elayada.

Ingredients:-

Raw rice.                -1 cup

Nendran banana.-1 ripe
Grated coconut. -1/2 cup
Grated jaggery. -1/2 cup
Salt.                  - to taste
Banana leaf.      -1 big

Instructions:-

1). Wash and soak raw rice in water for 3 hours. Drain and grind the soaked rice adding 1/4 tsp salt and 1tsp water to a thick and smooth paste.Transfer the ground rice batter to a bowl and keep aside.


2). Peel the skin of a ripe nendran banana (ripe Keralal banana) and chop the banana into small pieces. Mix grated coconut and grated jaggery. Keep the chopped nendran banana pieces and coconut jaggery mixture to a plate.

Method:-

1). Chop a big banana leaf  into small rectangular pieces. Place the chopped banana leaves on a steamer and just steam it without closing steamer lid to make the banana leaves flexible. Take a rectangular piece of steamed banana leaf. Put a small portion of the ground rice batter on it with a spoon.

2). Sprinkle 3 tbsp of coconut jaggery mixture over the rice batter on the banana leaf. Add chopped ripe nendran banana pieces in the middle of the coconut Jaggery mixture lengthwise.

3). Fold the banana leaf to one side and gently press on it.

4). Fill the remaining ground batter and stuffing mixture on the remaining rectangular banana leaves. Keep the batter filled banana leaves on a steamer plate one above the other.

5). Boil sufficient water in a steamer and place the steamer plate on the steamer. Close the steamer with lid and steam cook the nendran elayada for 15 minutes on medium low flame.

6). After 15 minutes switch off the flame and remove the steamer plate from steamer.

7). Transfer the steamed nendran elayadas to a plate.

8). Open the folded banana leaf. 

Very tasty Nendran Elayada is ready to serve with a cup of hot tea or coffee.
