Bitter gourd is called Karathe in Konkani.Karathe Kismuri is a Konkani dish.Karathe Kismori is a delicious side dish made with deep fried Bitter gourd pieces, fresh Coconut grating and Spices.
Deep fried crispy and crunchy white Bitter gourd pieces mixed with the coarsely ground masala paste of fresh Coconut grating, Coriander seeds, roasted red chillies,Turmeric powder,Tamarind and Jeera. You can make this Kismuri with Bhenda ,Ivy gourd etc als.In this recipe I used white Bitter gourd for deep frying.
The followings ingredients are needed to prepare this delicious dish.
Ingredients:-
White Bitter gourd.-1medium size
Onion. -1big
For grinding the Coconut Masala Mixture.
Coconut grating. -1 cup fresh
Coriander seeds. -1tsp
Red chilly. -5 or 6
Turmeric powder. -1/4 tsp
Tamarind. -a marble size
Jeera. -1tsp
For Seasoning:-
Coconut oil/Oil. -2tbsp
Urad dal. -1tsp
Mustard seeds. -1tsp
Curry leaves. -1spring
Instructions:-
Wash and chop 1medium size White Bitter gourd lengthwise and remove all the seeds.
Then chop the Bitter gourd into thin small pieces .
Marinate the chopped white Bitter gourd pieces with little salt and keep aside for 10 minutes.Then squeeze the water from the bitter gourd pieces to remove the bitter taste and deep fry them till crispy.Keep aside.
Roast Red chillies in little Oil and keep aside.
Finely chop 2 medium size Onion and keep aside.
Grind Coconut grating, raw Coriander seeds,, roasted red chillies, Turmeric powder, Jeera, a marble size Tamarind and little Salt to a coarse paste without adding Water.Keep aside.
Method:-
Heat 2tbsp Coconut oil/ Oil in a pan.Add 1tsp Urad dal and saute well.
When the Urad dal starts to change its colour, splutter Mustard seeds and add
1spring Curry leaves and saute well till the Curry leaves become little crispy.
Add finely chopped Onion and saute well till the Onion become transparent.
Add 1/2 of the deep fried crispy white Bitter gourd pieces and saute well.
Check Salt and mix well.
Add the coarsely ground Coconut Masala mixture and mix well.
Just before serving,mix the other half of the fried white Bitter gourd to get the crunchy taste of the White Bitter gourd Kismuri.
Mix everything well and transfer to a serving bowl.
A tasty and yummy White Bitter gourd Kismuri is ready to serve as a side dish with Rice and Dal curry.
