BANANA FLOWERS STIR FRY/ BONDI UPKERI - a Konkani style Stir fry.


Banana flower is called Bondi in Knokani.Bondi Upkeri is a very tasty Konkani style Banana Flower stir fry.Any type of cooking oil can be used for seasoning.But seasoning in coconut oil makes the stir fry more tasty.

The following ingredients are needed to prepare this delicious Banana Flower Stir Fry/ Bondi Upkeri.

Ingredients:-

Banana flower/ Bondi. -2
Mustard seeds.              -1tsp
Dry Red chillies.           -2
Coconut grating.           -1/2 cup
Salt.                                -to taste
Coconut oil/Oil.            -2 tsp

Instructions:-

Seperate the white florets inside the Bondi [inside the red leaves of the Banana flower] and remove the hard outer red leaves of  the Bondi [Banana flower]  till you get tender Bondi.Wash well and finely chop the tender Bondi [banana flower] and keep them in water to prevent discolouring and bitterness.


Pluck and remove the white pistils, style and scale inside each white florets and finely chop the banana florets. Keep the chopped florets in water.Wash the finely chopped Bondi and florets in water 2/3 times. Drain and squeeze out the water completely and keep aside

Broke dry Red chillies into two halves and keep aside.

Method:-

Heat Coconut oil in a pan and splutter Mustard Seeds and saute well

Add  broken dry Red chillies and saute well.

Add the finely chopped  tender Bondi [Banana  flower] and white florets. Saute well.

Add  required Salt and mix well. Cover the pan with a lid and cook till the chopped Bondi [Banana flower] and florets become soft .

Add Coconut grating and mix well.Stir well till the water evaporates and switch off the flame.

A tasty Banana Flower Stir fry/ Bondi Upkeri is ready to serve as a side dish with rice.
