Taro root (Colocasia root) is called Alva Mande in Konkani.Alva Mande Upkari/ Taro root Masala fry can be served as a dry side dish with Rice.
The following ingredients are needed to prepare Alva Mande Upkari
Ingredients:-
Alva Mande[Taro root]. - 6
Coriander powder. -2 tsp
Red chilly powder. -1tsp
Turmeric powder. -1/4 ts
Pepper powder. -1/2tsp
Hing powder(asafoetida) -1 tsp
Amchur(Mango powder). - 1/2 tsp
Coconut oil/ Oil. - 2 tsp
Carom seeds/Ajwain. -1/2tsp
Mustard seeds. -1 tsp
The following ingredients are needed to prepare Alva Mande Upkari
Ingredients:-
Alva Mande[Taro root]. - 6

3. In a wide mixing bowl add the chopped Taro root pieces and add Red chilly powder, Coriander powder, Turmeric powder, Pepper powder, Hing powder and required Salt.
4. Mix the chopped Taro roots with all the spice powders together with your hands till the spice powders nicely coated with the Taro root pieces.Keep aside

Method:-
Heat Oil in a pan and splutter Mustard seeds and Carom seeds(Ajwain) and saute well.
Add the Alva Mande(Taro root) pieces coated with spices and stir well.
Sprinkle little Water and mix well.
Cover the pan with a lid and cook on low flame.Sprinkle little Water in between and stir well till the Taro root pieces become soft and cooked well.
When cooked,sprinkle Amchur( Mango powder) and mix everything well and switch off the flame.
