Ponsa Gudhga Sukke -Konkani recipe/ Raw (tender)Jackfruit Coconut Masala curry .


Raw(tender)Jackruit is called Ponsa Gudhgo in Konkani. Ponsa Gudhga Sukke is a very tasty, Kochi side GSB style Coconut based masala curry made with raw and tender Jackfruit. Raw Jackfruit with tender Jackfruit seeds is best for making this Sukke recipe.The taste of this Sukke is heavenly and the aroma of the seasoning in Coconut oil makes the curry more tasty and awesome.

The following ingredients are needed to prepare Ponsa Gudhga Sukke.

Ingredients:-

Ponsa Gudhgo.       - a small round piece( Raw Jackfruit with tender seeds)
Salt.                         -to taste

Sol.                           -a small piece of dry mango or Dharmbya sol
Coconut oil               -1tsp [to make it more tasty.]

For Coconut Masala Mixture:-
 
Coconut grated.       -1 cup fresh
Red Chilly powder. -2 tsp
Turmeric powder.    - a pinch

For Seasoning:-

Coconut oil.                    - 2 tsp
Urad dal.                         -1 tsp
Mustard seeds.                -1 tsp
Fenugreek (Methi seeds).-10 seeds only
Curry leaves.                    -1 spring
 
Instructions;-

1.Take a small round piece of a Raw-& tender Jackfruit.Raw Jackfruit with tender seeeds is good for making Ponsa Gudhga Sukke.

 
2. Apply oil on your hands and on kitchen knife.Chop and remove the outer thorny skin of the Jackfruit and chop into lengthy pieces along with core portion.(Mhav). Remove the Jackfruit seeds if any and keep the chopped pieces in water for few minutes and wash well.Keep aside.
 
3. Wash and pressure cook the raw Jack fruit pieces with 1cup Water and required Salt for 2 whistles to make it soft and keep aside. Do not over cook .
 
4. Drain all the Water and transfer to a bowl and gently smash the cooked Jackfruit pieces a little with your hands or chop into thin pieces and keep aside.
 
5. In a wide mixing plate add Coconut gratings, Red chilly powder and Turmeric powder.

6. Mix well all the three items on the plate together with your hands and make a Coconut mixture.

7. Add the gently smashed Jackfruit pieces into the mixing bowl and add a small piece of dry mango. Slowly mix the cooked  Jackfruit pieces with the Coconut mixture with your hands and keep aside.
 
Method:-

1.Heat 2 tsp Coconut oil in a kadai and add Urad dal and saute well.

2.Splutter Mustard seeds and saute well.

3.Add Methi seeds and fry in oil and add Curry leaves and saute well and fry for a second.

4.Add the Jackfruit Coconut mixture and stir well and cook on low flame for 2 minutes. Stir in between and switch off the flame.


5.Sprinkle 1tsp Coconut oil over the Sukke to make it more tasty and to give it the fragrance of Coconut oil.
 
A tasty,lipsmacking, awesome and delicious ponsa Gudhga Sukke is ready to serve as a side dish with Rice.
