Arbi (Taro root) Stir Fry Recipe

Colocasia root is called Arbi and also known as Taro root.Arbi stir fry is a very tasty and lip smacking side dish made with boiled Arbi( Taro root ) pieces and seasoned in Coconut oil with Mustard, Carom seeds and othe spice powders.This delicious side dish can be served with Rice, Chapathi, Phulkas etc.Any type of cooking oil can be used for seasoning , but seasoning in Coconut oil makes the Arbi stir fry more tasty.

The following ingredients are needed to prepare this delicious stir fry recipe.

Ingredients:-

Arbi/Colocasia(Taro root) .-5 or 6 large 
Salt.                                     - 2tsp or to taste
Mustard seeds.                    -1tsp
Carom seeds(Ajwain).        -1 tsp
Green chillies.                     -3
Curry leaves.                       -1spring
Red chilly powder.              -1tsp
Pepper powder.                   -1/2 tsp
Coriander powder.              -2 tsp
Turmeric powder.               -1/4 tsp
Amchur( Mango powder).  -1 tsp
Hing powder( Asafoetida). -1/2 tsp
Coconut oil/ cooking Oil.   - 4 tsp



Instructions:-

Peel and remove the outer skin of the Arbi/Taro root completely and wash in Water thoroughly two, three times and keep aside.



Add the de skinned Arbi in a small cooking vessel and add 2 tsp Salt and required Water to immerse the Arbi completely in Water.Boil and cook for about 5 minutes or till the Arbi/Taro root becomes soft, firm and well cooked but not to become mushy.

Discard Water from the cooked Arbi and chop into thick round pieces and keep aside.


Method:-

Heat oil in a pan and splutter Mustard seeds and saute well.

Add Carom seeds( Ajwain) and saute well.

Adding half slit Green chillies and Curry leaves and saute well and fry in oil for a second.

Lower the flame and add Red chilly powder, Turmeric powder, Coriander powder, Pepper powde and Hing powder and fry well in oil for a second.



Add the boiled Arbi/Taro root round pieces and stir well.(Check Salt and add a little if needed.)

Sprinkle 2tbsp Water. Gently stir and mix the boiled Arbi pieces till all the spice powders nicely coated with the cooked Arbi pieces.

Sprinkle Amchur [Mango powder] and gently give a  mix and switch off the flame.

A tasty, lip smacking and delicious Arbi( Taro root) stir fry is ready to serve as a side dish with Rice, Chapathi or Phulkas.
