Chana Dal Vada, Chana Dal Ghari (Parippu Vada) / Chickpeas Lentil Fritters


Chickpeas lentil is called Chana dal and Chickpeas Lentil fritters is called Chana dal Ghari /Chana dal Vada.Chana dal Ghari[Chana dal Vada] is a very tasty, yummy, delicious, little soft, little spicy and little crunchy deep fried snack made with ground Chana dal.This deep fried snack is very famous in Kerala,south India.This Chickpeas Lentil Fritters is known as Parippu vada in Kerala.

The following ingredients are needed to prepare Chana dal Ghari / Parippu Vada [Chana dal vada.]

Ingredients:-

Chana dal.       -1 cup
Shallots.          -8 or Onion. -1 medium size
Green chillies.-5
Ginger.            - a small piece
Curry leaves    -1 spring
Hing powder.   - 1/2 tsp
Salt.                 -to taste
Cooking oil.    - for deep frying

Instructions:-

Wash and soak Chana dal in water for 4 hours.Drain and put the soaked Chana dal in a colander for half an hour to drain water completely.

Keep aside 2 tsp soaked Chana dal in a small bowl seperately.

Peel, wash and chop Shallots into thin roundels and keep aside.Or Peel,wash and finely chop Onion and keep aside.

Chop a small fresh Ginger into very small and thin pieces and keep aside. (about 1/2 tsp).

Wash and chop Green chillies into thin roundels and keep aside.

Wash and finely chop Curry leaves and keep aside.

In a small mixing bowl add the chopped Shallots or finely chopped Onion pieces, chopped fresh Ginger pieces, chopped Green chilly roundels, finely chopped Curry leaves and little Salt.Mix everything well and keep aside.

Coarsely ground the soaked and completely drained Chana dal in a mixer grinder to a thick paste without adding any drop of water and keep aside.( Just 2 or 3 rounds in Mixer grinder is enough, and do not make it a smooth paste.)

Transfer the coarsely ground Chana dal in a wide mixing bowl and add the chopped ingredients and mix them with the ground Chana dal.Add 2tsp seperately kept soaked Chana dal from small bowl and mix it with the ground Chana dal.Mix everything well and keep aside.

Dip the hands in water and take a small portion of the ground Chana dal mixture from the wide mixing bowl and make small equal size balls from the ground mixture and keep them on a plate.

Method:-

Heat Oil in a deep frying pan on medium flame .

Wet your left palm and place a ball shaped Chana dal mixture in the centre of your palm and gently press it with your right hand fingers to flatten the ball to a disc shape.

Gently drop it into the hot oil and deep fry until golden brown colour and crisp on outside.

Flip and turn  the Vadas in between with a slotted spoon to cook inside and all the sides evenly.

When cooked, remove from hot oil and transfer to a paper towel to absorb extra oil.

A very tasty, soft and little crunchy Chana dal Ghari (Parippu vada) is ready to serve as a tea time snack.


Serve the Chana dal Vada / Chana dal Ghari (Parippu Vada) hot with Tea or coffee.
