Mande( Taro root) Hummaan- Konkani recipe / Spicy Arbi Curry Recipe.

Taro root / Colocasia root also known as Arbi is called Mande in Konkani.Mande Hummaan is a Konkani style Taro root/ Arbi/Colocasia root spicy curry.
Taro root/ Arbi/ Colocasia root contains a good amount of fibre and is good for digestive process.Mande/ Taro roots are used in Konkani cuisine to make varities of dishes, curries and also used for making  deep fried chips.Mande Baluk( Colocasia chips) is very famous tea time snack among Kochi GSB people.

The following ingredients are needed to prepare Mande Hummaan.

Ingredients:-


Mande( Taro root) - 5 or 6 medium size
Red chilly powder. -1 tsp
Turmeric powder.  -1/4 tsp
Hing powder.         -1/2 tsp

Salt.                       - to taste



For Seasoning:-


Cooking oil.       -2 tsp
Mustard seeds. -1 tsp



Instructions:-


1.  Scrap and remove the outer skin of the Mande/ Taro roots. Wash thoroughly in water two three times and keep aside.





2.  Chop the Mande/ Taro roots into small pieces and keep the chopped pieces in a wide mixing vessel.


3.  Add Turmeric powder, Red chilly powder and Hing powder .



4.  Mix well the chopped mande pieces till all the spices nicely coated and keep aside for few  a minute.



Method:-



Heat oil in a pan on medium flame and splutter Mustard seeds and saute well.

Add the chopped and spice coated Mande pieces from the mixing vessel and stir well.

Add 2 cup of Water and stir well.  


Add required Salt and mix well.

Cover the pan with a lid and cook on medium low flame till the chopped Mande/ Taro pieces become soft and well cooked.

When done switch off the flame.

A tasty and healthy Mande Hummaan is ready to serve hot with Rice.
