Bitter gourd is called Karathe in Konani.The following ingredients are needed to prepare this Bitter gourd Stir fry.
Ingredients:-
Bitter gourd. -1 big
Green chillies. - 4
Mustard seeds. -1 tsp
Fenugreek/Methi seeds. -8 seeds only
Salt. -to taste
Coconut oil. -2tsp

Instructions:-
Wash the Bitter gourd (Karathe) in water. Chop the Bitter gourd lengthwise into two halves and remove the seeds.Then chop the Bitter gourd pieces into semi circle pieces and again chop the semi circle pieces into thin 1 inch lengthy pieces and keep aside.
Wash and half slit Green chillies lengthwise and keep aside.
Method:-
Heat 2tsp Coconut oil in a pan and splutter Mustard seeds and saute well.
Add Fenugreek seeds (Methi seeds) into the pan and fry for a second and saute well.
Add half slit Green chillies and fry well in oil for a minutes on low flame.
Add the chopped Bitter gourd pieces and saute well.
Do not add any drop of water. Lower the flame and fry the Bitter gourd pieces in oil for few minutes
Cover the pan with a lid and cook the Bitter gourd pieces till soft on low flame and saute in between.
Add required Salt into the pan and mix well with the Bitter gourd pieces.
Cover the pan and cook the Bitter gourd piece again for 2 minutes and switch off the flame.
A tasty and healthy Karathe Upkari /Bitter gourd Stir Fry is ready to serve as a side dish with rice.
