Ponsa Guduga Upkari(Konkani recipe)/ Tender Jackfruit Stir Fry.

Tender Jackfruit is called Ponsa Gudugo in Konkani.Very tender Jack fruit is called Ponsa Gidgi in Konkani.The following ingredients are needed to prepare this delicious recipe.

Ingredients:-

Tender Jackfruit.     -1/4 portion of a small tender Jack fruit
Mustard seeds.        -1/2 tsp
Red chilly powder. - 1tsp or 1 and 1/2tsp
Salt.                         - to taste
Cooking oil.            -1tsp
Coconut oil.            -1tsp 

Instructions:-

Take 1/4 portion of a small tender Jackruit [Ponsa gudugo].Chop and remove the outer thorny skin.

Apply little oil on the knife and  also on hands and chop the tender Jackfruit into medium pieces along with core part. Then chop into thin lengthy pieces and keep them in water and wash well and keep aside.

You can pressure cook the tender Jackruit pieces with 1cup water for 1 whistle or till soft and well cooked.(optional)


Method:-

Heat cooking oil in a pan splutter Mustard seeds and saute well.

Lower the flame and add Red chilly powder into the pan.


Drain the water and add the chopped tender Jackfruit pieces into the pan and mix well.

Add required Salt and  add a cup of water into the pan and mix well.

Cover the pan with a lid and cook the Jackfruit pieces till cooked and become soft on low medium flame and  till the water evaporates. Saute in between.

Add 1tsp Coconut oil over the  Jackfruit Stir fry and mix well.

A tasty Tender Jackfruit Stir Fry / Ponsa Guduga Upkari is ready to serve as a side dish with rice.
