Ragi Flour Soft Chapathi/ Finger Millet flour Roti


The following ingredients are needed to prepare Ragi flour Soft Chapathi.

Ingredients:-

Ragi flour (Finger Millet). - 3/4 cup
Wheat flour.                       - 1and 1/4 cup
Salt.                                    - 1tsp
Oil/ Ghee.                           - 3tsp
Water.                                  - 1cup



Instructions:-

Sieve 1and 1/4 cup Wheat flour and keep aside in a wide mixing bowl.

Heat a pan and dry roast 3/4 cup Ragi flour for a minute and stir in low flame and keep it aside to cool.[Do not over roast.]

In a small vessel boil 1cup Water and keep aside.


Method:-

1. In a wide mixing bowl mix the Ragi flour,1tsp Salt and 2tsp Ghee with Wheat flour.

2 .Add 1cup boiled and warm Water slowly and little by little into the flour mixture and mix with a spoon.

3. When little cool, knead the dough well using your hands to make a soft dough.Kneading makes the Chapathi more soft and tasty.Apply little Ghee on the dough and knead again for 2 minutes.[If the dough stick to your hands, apply little oil/Ghee on the dough and knead it well.]



4. Place the kneaded soft dough on the Chapathi board and roll into cylinder shape dough.



 5.Divide the cylinder shaped dough into equal portions.



6. Make the divided portions into lemon size dough balls and keep aside in the wide bowl.



7. Sprinkle little Wheat flour in the middle of the chapathi board and place one lemon size dough ball on it.



 8.Slightly flatten the dough ball into a round disc with a rolling pin.



9.Dip the flatten dough ball into the Wheat flour each time and roll it into even and round Chapathis by rolling the pin on all side edges and middle of  the flatten dough.




10. Make even and round Chapathi[not thin] with the dough and keep aside.




11. Heat a tawa and keep the flatten dough( Chapathi) on hot tawa and cook on one side.

12. Press in the middle and all side edges of the flatten dough with a flat spatula to puff up. When bubble comes, flip to cook the other side .Again flip and remove from hot tawa.
[Just flip it twice to get a soft chapathi and do not over roast on hot tawa,that makes the chapati hard.]


 13.  Add little Ghee over the chapathi when you flip on the other side.( optional)



14. Serve the soft and tasty Ragi Chapathi with Tomato Onion curry.
