Ivy gourd is called Tendli and Potato is called Kuk in Konkani.The following ingredients are needed to prepare this delicious recipe.
Ingredients:-
Ivy gourd. -8
Potato. -1 big
Green chillies. -3
Mustard seeds. -1tsp
Salt. - to taste
Cooking oil. -1 tsp
Instructions:-
Wash and trim both the ends of the Ivy gourd.Chop into lengthy pieces and keep aside.
Peel the Potatoes and chop into medium lengthy pieces.Wash and pressure cook for 1 whistle adding required Water and keep aside.
Method:-
Heat oil in a pan and splutter Mustard seeds and saute well.
Add half slit Green chillies and fry in oil for a second.
Add the Ivy gourd pieces and saute well.
Add required Salt and mix well.Sprinkle little Water. Cover and cook the Ivy gourd in medium low flame till cooked but little crunchy.
Add the cooked Potato pieces and mix well with the cooked Ivy gourd pieces.
Saute we and cook for a minute and switch off the flame.
A tasty and little crunchy Ivy gourd & Potato Stir fry is ready to serve as a side dish with Rice.
