Coconut Sambar (Varutharacha Sambar)

Coconut Sambar is a tasty and delicious Sambar made by adding ground masala paste of roasted Coconut and other spices.

The following ingredients are needed to prepare Coconut Sambar / Varutharacha  Sambar.

Ingredients:-

Turdal.                  -1/2cup
Green chilly.         -1
Turmeric powder. -1/4 tsp
Salt.                      -to taste
Potato.                  -2 medium size
Carrot.                  -1medium size
Tomato                 -1small
Onion.                   -1medium size


For grinding the Coconut Masala Paste:-

Coconut grating. -1cup
Urad.dal.             -1tbsp
Chana dal.           -1tsp
Coriander seeds. -1tbsp
Red chillies.        - 8
Pepper corn.        -1tsp
Cumin seeds        -1/4tsp
Tamarind.            -a gooseberry size.

For Seasoning;:-

Coconut oil /Oil.  - 1tsp
Mustard seeds.     - 1tsp
Dry Red chilly.     - 1 [broken into 2 halves]
Curry leaves.        - 1spring

Instructions:-

Pressure cook 1/2cup Turl adding required Water, Turmeric powder and a half slit Green chilly for 2 whistles or till cooked soft and keep aside.

Soak a gooseberry size Tamarind in little warm Water for 5 minutes and keep aside.

Heat 1/4 tsp Oil in a pan and roast on low flame dry Red chillies, Urad dal, Chana dal, Pepper corn, Coriander seeds, Cumin seeds and grated Coconut.Saute well till the Coconut  grating changes to golden brown colour.Remove from flame and when cooled grind the roasted items along with soaked Tamarind to a smooth paste and keep aside.

Peel,wash and chop Potato and Carrot into medium cubes and keep aside.

Peel and roughly chop Onion and keep aside.

Wash and chopTomato into medium pieces and keep aside.


Method:-

In a cooking vessel add chopped Potato, chopped Carrot, chopped Tomato, roughly chopped Onion  and cook with required amount of water till soft.

Then add the cooked Tur dal. Mix well and boil for 1 minute.

Add required Salt and mix well. Boil for 2 minutes.

Add the ground Coconut Masala paste and mix well.Add little water to adjust the consistency and boil for few minutes and switch off the flame.

Heat Coconut oil or any cooking oil in a  small pan for seasoning and splutter Mustard seeds.Add one broken Red chilly and few Curry leaves and fry for a second and switch off the flame.

Add the above seasoning into the cooking vessel and mix the Sambar well.

A tasty Coconut Sambar /Varutharacha Sambar is ready to serve with Rice, Dosa or Idli.
