Kelya Phadi / Deep Fried Banana Chips

Fried Banana chips is called Kelya Phadi in Konkani.Kelya Phadi is one of the side dish in Konkani feast.

The following ingredients are needed to prepare Kelya Phadi.

Ingredients:-

Raw Nendran Banana. -5
Salt.                              -1tbsp
Turmeric Powder.         -1/4tsp
Water.                            -1/4 cup

Curry leaves.                 -1spring
Oil.                                 - for deep frying.


Instructions:-

Peel the skin of raw Nendran Bananas. Chop each Banana into four pieces vertically and again chop it into thin slices horizontally.

In a small bowl add 1tbsp Salt and 1/4tsp Turmeric powder in 1/4 cup of  Water and mix well.Keep aside.


Method:-

Heat oil in a wide bottom pan on medium flame for deep frying.

Add few Curry leaves into the hot oil and fry well. Remove the fried Curry leaves from hot oil and transfer to a dry plate

Add the chopped Banana pieces into the hot oil in batches and don't overcrowed.

Keep stirring once in a while and fry till the bubbles are almost stopped.

Lower the flame and add 1tsp Turmeric powder mixed Salt water into the hot oil.

Increase the heat to medium flame and keep on stirring with a slotted spoon till the bubbles and sizzling sounds stops.

Deep fry the Banana slices till they become crisp.

Remove the deep fried Banana slices from hot oil with the slotted spoon and transfer to a clean and dry plate.

Add the fried Curry leaves and mix with the fried Banana chips.


Repeat the process and deep fry the remaining Banana slices.


When completly cooled store them in air tight container.
