Pumpkin Coconut Curry (Dudhi Gassi) / Konkani Recipe

Pumpkin is called Dudhi (Dudde) in Konkani. Pumpkin Coconut Curry (Dudhi Gassi) is a  tasty, sweet and delicious Coconut based yellow Pumpkin Curry.

The following ingredients are needed to prepare Pumpkin Coconut Curry.

Ingredients:-

Pumpkin. -2 cup chopped
Salt.         -to taste

For grinding the Coconut Masala Paste,:-

Coconut grated.  -1cup
Dry Red chillies.  -1 tbsp
Turmeric powder .-1/4tsp
Coriander seeds. -2tsp
Tamarind.             - a marble size.
Jagger.y               - a marble size.[optional]

For Seasoning:-

Cooking oil        -1tsp
Mustard seeds. -2tsp
Curry leaves.     - 1spring

Instructions:-

Chop and remove the outer skin of the Pumpkin.Chop the Pumpkin into small cubes and keep aside.

Soak Tamarind in 2tbsp of Water and keep aside.

Grind the grated Coconut along with dry Red Chillies, Coriander seeds, Turmeric powder, soaked Tamarind and Jaggery to a smooth paste and keep aside.

Method:-

In a cooking vessel add the chopped Pumpkin cubes and 2 cup of Water.Boil and cook the Pumpkin cubes till soft and crunchy.

Add ground Coconut Masala paste and mix with the cooked Pumpkin cubes in the cooking vessel.

Add required Salt and mix well.

Add required Water to make the Curry to a gravy consistency.Boil and cook for 2 minutes and switch off the flame.

Heat cooking oil in a pan and splutter Mustard seeds and saute well.

Add Curry leaves and fry well and then switch off the flame.

Add the above seasoning into the Pumpkin Curry in the cooking vessel.

A very tasty, sweet and delicious Pumpkin Coconut Curry (Dudhi Gassi) is ready to serve hot with steamed Rice.
