Badi Kananga Upkari / Spicy Tapioca Curry.

Tapioca is called Badi Kanang / Kappe in Konkani. Badi Kananga Upkari is a Konkani style spicy Tapioca stir fry adding Coconut gratings,Onion, Ginger and Curry leaves.

The following ingredients are needed to prepare Badi Kananga Upkari.

Ingredients:-

Tapioca.                 - 3/4 kg
Onion.                    -1medium
Ginger.                   - a small piece
Grated Coconut     -1/4 cup
Red Chilly powder. -1tsp
Turmeric powder.   -1/4tsp
Curry leaves.          -1spring.
Urad dal.                 -1/2tsp
Mustard seeds.       -1tsp
Salt.                         - to taste.
Coconut oil.             -2tsp



Instructions:-

1].Take a Tapioca and chop it into big horizontal pieces.

2].Remove and discard the outer skin and chop the Tapioca into medium cubes.

3].Wash the Tapioca pieces in water 2 / 3 times to remove the dust and keep aside.

4].Peel and finely chop Onion and keep aside.

5].Peel, wash and finely chop a small piece of Ginger and keep aside.



Method:-

1). In a vessel add the chopped Tapioca pieces, 1/2tsp Salt and add water to cover the chopped Tapioca 

pieces and boil well.

2). Cook the Tapioca pieces till soft on low flame.Dicard the cooked Water and keep aside the cooked Tapioca.

3). Heat Coconut oil in pan and add Urad dal and saute well.When Urad dal starts to change the colour, splutter Mustard Seeds and add Curry leaves.Saute well.

4). Add finely chopped Ginger pieces and saute well.

5). Add finely chopped Onion and required Salt. Saute well till the Onion becomes translucent.

6). Add Red chilly powder and Turmeric powder and mix well.

7). Add grated Coconut and saute well.

8). Add the cooked Tapioca pieces and saute well with all the ingredients in the pan.

A tasty and delicious Badi Kananga Upkari is ready to serve with Rice or with a cup of hot tea or coffee.
