Bitter gourd is called Karathe in Konkani.Karathe Adgai is a Konkani style instant Bitter gourd Pickle adding raw Mango and goes well as a side dish with Rice, Kanji [Rice gruel] etc.
The following ingredients are needed to prepare Karathe Adgai / Instant Bitter gourd Raw Mango Pickle.
Ingredients:-
Bitter gourd. - 2 medium size
Raw Mango. -1 medium size
Green chillies. - 5
Ginger. -a small piece.
Hing powder. -a pinch
Salt. -to taste
Instructions:-
1. Wash and chop the Bitter gourd lengthwise and remove the seeds. Then chop the Bitter gourd into 1/2 inch lengthy pieces. Wash and keep aside.
2. Wash and peel the outer skin of a raw Mango and chop into 1/2 inch lengthy pieces. Keep aside.
3. Wash and chop the Green chillies into 2 halves horizontaly and keep aside.

4. Peel the skin, wash and chop a small piece of Ginger into thin lengthy pieces and keep aside.

Method:-
1. In a bowl add the chopped raw Mango pieces, chopped Green chillies and chopped Ginger pieces.Apply little Salt and mix all the ingredients in the bowl together and keep aside for 10 minutes.
2. In a vessel add the chopped Bitter gourd pieces. Add required water and boil the Bitter gourd pieces till soft and keep aside the cooked Bitter gourd pieces.
3. In a pan add the raw Mango pieces, Green chillies and Ginger pieces.Add little water and boil till the Mango pieces become soft.
4. Add the boiled Bitter gourd pieces along with cooked water and mix with the cooked raw Mango pieces. Boil for few minutes on low flame.Check for Salt and add if needed and mix well. Saute in between.
5. Add Hing powder and mix with all the ingredients in the pan together on low flame and switch off the flame.
6. A tasty Karathe Adgai (Instant Bitter gourd Raw Mango Pickle) is ready to serve as a side dish with Rice, Kanji (Rice gruel) etc.
