Kuve Pitti Duddali (Arrowroot Halwa)


Arrowroot Halwa is called Kuve Pitti Duddali in Konkani.Kuve Pitti Duddali is a traditional Konkani style healthy and sweet pudding made with Arrowroot Powder.

The following ingredients are needed to prepare Kuve Pitti Duddali / Arrowroot Halwa.

Ingredients:-

Arrowroot Powder. -1cup
Sugar.                      -1cup
Boiled Milk.            -1cup
Clean Water.            -3cup
Cardamom pods.     -5
Ghee.                       -1tsp for greasing the plate.


Instructions:-

1).Keep aside 1cup of Arrowroot Powder.

2).Keep aside 1cup of Sugar .

3).Keep aside 1cup of boiled Milk.

4).Keep aside 3cup of Water in a small bowl.

5).Peel the Cardamom pods and crush into Cardamom powder and keep aside.

6) Grease a steel plate with 1tsp Ghee and keep aside.


Method:-

1).In a mixing bowl add 1cup of Arrowroot Powder and 6 cups of water and mix well. Mix the Arrowroot Powder without any lumps.Keep aside and allow the mixture to rest for 30 minutes.

2).The clean Arrowroot will settle down at the bottom of the mixing bowl and the water will remain on the top.

3).Discard the water that has risen on top.

4).In a wide bottom pan add the white Arrowroot paste and mix with 1cup of boiled Milk ,1cup of Sugar and 3 cup of clean Water without any lumps.

5).Heat the wide bottom pan on low flame and boil the diluted mixture of Arrowroot, Milk , Sugar and Water.

6).The mixture starts to thicken.Keep mixing it continuously.

7).Keep on stirring the Arrowroot mixture.

8).When the Arrowroot mixture becomes thick add Cardamom powder. Mix and stir well.

9).Stir the mixture continuosly without sticking to the bottom of the pan.

10).The mixture will become thick and leaves the sides of the pan.

11).Stir well and switch off the flame.

12).Remove the pan from the flame and pour the thick Arrowroot Halwa mixture to a greased plate and allow it to cool.

13).When little cooled chop the Arrowroot Halwa into diamond shape.

14).A very tasty, healthy and delicious Kuve pitti Duddali / Arrowroot Halwa is ready to to serve.
