The following ingredients are needed to prepare Kelya Kakkambi / Pazham Pradhaman / Banana Kheer
Ingredients:-
Broken Red Rice. -1cup
Ripe Nendran Banana. -1
Jaggery (grated). -1 and 1/4 cup
Thick Coconut milk. -1cup
Cardamom powder. -1tsp
Cashewnuts. -10
Salt. - a pinch
Instructions:-
1. Wash and pressure cook 1cup broken Red Rice adding 8 cup of water for 1whistle and keep aside.
2. Peel the skin of ripe Nendran Banana and chop into 1inch lengthy pieces and again chop into halves and keep aside.
3. Grate the Jaggery. In a vessel add the grated Jaggery and 1/4 cup of water.Boil well till the Jaggery dissolves in water. Filter the Jaggery water with a seiver to remove the impurities and keep aside.
Method:-
1. In a wide bottom Kadai add the cooked broken Red Rice with cooked Water and boil well. Add the chopped ripe Nendran Banana pieces and boil well.
2. Add 1tbsp Ghee in the Kadai and mix with the cooked broken Red Rice and Banana pieces and saute well.
3. Add the Jaggery water into the kadai.Mix the Jaggery with the cooked Rice and Banana pieces.Stir well without sticking to the bottom.
4.Add a pinch of Salt into the mixture and mix well..
5. Add Cashewnuts into the kadai and boil on low flame.
6. Add Coconut milk and stir continuously on low flame and do not boil.
7. Add Cardamom powder and stir the Banana Kheer mixture continuously on low flame till it thickens.
8. When the bubbles starts to appear switch off the flame.
A tasty, sweet and delicious Kelya Kakkambi / Pazham Pradhaman /Banana Kheer is ready to serve hot or cold.
