Kukka Adgai / Potato Pickle


Potato is called Kuk in Konkani. Kukka Adgai is a Konkani style instant Potato Pickle goes well as a side dish with Rice, Dosa or Idli.

The following ingredients are needed to prepare Kukka Adgai / Potato Pickle.

Ingredients:-

Potato.                  -1 medium size
Red chilly.            - 5
Coriander seeds.  -1/2tsp
Mustard seeds.     - 1tsp
Fenugreek seeds. -1/4tsp
Hing powder.       -1tsp
Tamarind.            - a Gooseberry size
Salt.                     -to taste.

For Seasoning:-

Coconut oil.     -1tsp
Mustard seeds. - 1tsp
Curry leaves.    -1spring

Instructions:-

1. Peel the skin and wash the Potato and chop into 1 inch lengthy pieces.Apply little Salt and marinate for 10 minutes and keep aside. Squeeze the Potato pieces and deep fry them in oil till crisp and keep aside.

2. In a pan dry roast Coriander seeds, Fenugreek seeds (Methi seeds) and Mustard seeds till the Mustard seeds splutter and keep aside.In the same pan add little oil and roast the Red chillies and keep aside.

3. Grind the dry roasted ingredients together along with roasted Red chillies,Tamarind, Hing powder and Salt adding very little water to a fine paste. Keep aside the Chilly paste.



Method :-

1. In a bowl add the ground Chilly paste and the deep fried Potato pieces and mix well.

2. Heat oil in a pan for seasoning and splutter Mustard seeds. Add Curry leaves and saute well and switch off the flame.

3. Pour the above seasoning into the Potato pickle in the bowl.


4. Mix well and transfer the Kukka Adgai / Potato Pickle in a serving bowl.

5. A very tasty Kukka Adgai / Potato Pickle is ready to serve as a side dish with Rice, Dosa or Idli.
