Mitke Sange Sukke / Cluster Beans Potato Masala.


Cluster beans is called Mitke sang in Konkani.Mitke Sange Sukke is a Konkani style side dish made with Cluster beans and Potato cooked in spicy Coconut Masala.

The following ingredients are needed to prepare Mitke Sange Sukke /Cluster beans Potato Masala.

Ingredients:-

Cluster Beans.       -2 cup chopped
Potato.                   -2 medium size
Dry Mango piece. - a small piece.
Salt.                       -to taste

For Coconut Masala:-

Grated Coconut.    -1cup
Red chilly powder. -2tsp
Turmeric powder.   -1/4tsp

For Seasoning:-

Coconut oil.    -2tsp
Urad dal.         -1/2tsp
Mustard seeds. -1tsp


Instruction.-
Mitke Sang / Cluster Beans.


Wash and trim both the ends of the Cluster beans and remove the fibres on its sides.Finely chop the Cluster beans.

In a small vessel add the finely chopped Cluster beans, required water and little Salt and boil till the Cluster beans turns tender. Drain the cooked water and keep aside the cooked Cluster beans.

Peel the skin and wash the Potatoes. Chop the Potatoes into small cubes and keep aside.

In a small vessel add the chopped Potatoes, required water and little Salt. Boil till the Potatoes become soft and firm.

In a small mixing bowl add grated Coconut, Red chilly powder and Turmeric powder.Mix well all the ingredients in the mixing bowl together with your hands and keep aside the Spicy Coconut Masala mixture

Method.-

Heat 2tsp Coconut oil in a pan on low flame and add Urad dal and saute well.

Splutter Mustatd seeds and saute well.

Add the boiled Cluster beans and saute well.

Add a small piece of dry Mango and saute well. Cook for 2 minutes on low flame and stir in between.

Add cooked Potato pieces and mix well.

Add the Spicy Coconut Masala Mixture and mix well with the cooked Cluster beans and cooked Potato pieces.Cook on low flame and stir in between till the water absorbs completely.

Add little Coconut oil over the Sukke and mix well -- optional.

A very tasty Konkani style Mitke Sange Sukke is ready to serve as a side dish with Rice and Dal curry.
