Nuchi (Konkani Style Coconut Rice)


Nuchi is a tasty and delicious Konkani style Coconut Rice normally prepared from left over cooked Rice and served as a breakfast dish.We can also prepare Nuchi / Coconut Rice with Basmati Rice or Sona Masoori Rice.

The following ingredients are needed to prepare Nuchi / Coconut Rice.

Ingredients:-

Basmati Rice.      - 1cup
Grated Coconut.  -1 and 1/2 cup
Salt.                     -to taste

For Seasoning:-

Oil.                     - 2tbsp
Urad dal.             -1tsp
Mustard seeds.    -1tsp
Fenugreek seeds. -1/2tsp
Red chillies.         - 4
Curry leaves.        -2 spring

Instructions:-

Wash and soak Basmati Rice in water for 30 minutes.Then drain the soaked water and keep aside the soaked Rice.

Pressure cook the soaked Rice adding 2 cups of water and required Salt for 1 whistle and keep aside. Once the pressure is released open the lid and set aside the cooked Rice.

Broke the dry Red chillies into pieces and keep aside.

Method:-

In a wide bottom pan heat oil on low flame and add Urad dal and saute well.

When the Urad dal starts to change its colour splutter Mustard seeds and Fenugreek seeds (Methi seeds) and saute well.

Add the broken dry Red chilly pieces and Curry leaves. Saute well and fry in oil for a minute.

Add the cooked Rice and mix with the seasoning and stir well on low flame.

Switch off the flame and garnish the cooked Rice with grated Coconut.

A very tasty and delicious Nuchi / Coconut Rice is ready to serve along with Pickle or Chutney.

Transfer the Nuchi / Coconut Rice to a serving plate and serve hot.
