Okra Stew / Lady's Finger Stew / Vegetarian Okra Stew

Okra stew is a very tasty and delicious coconut milk based Lady's Finger gravy cooked with Tomato, Shallot and Green chillies.This Vegetarian Okra Stew goes well with Rice.

The following ingredients are needed to prepare Okra Stew / Lady's Finger Stew / Vegetarian Okra Stew.

Ingredients-

Okra /Lady's finger.            -8
Green chillies.                     -2
Shallots.                               -8
Curry leaves.                        -1spring
Tomato.                                -1medium size
Turmeric powder.                 -1/4tsp
Thick Coconut milk.            -1cup
Thin Coconut milk.              -1and 1/2cup
Mustard seeds.                      -1tsp
Cumin seeds.                         -1/2tsp
Coconut oil.                           -3tsp
Salt.                                        -to taste.


Instructions-

Wash and chop Lady's finger /Okra  into 1inch pieces and keep aside.

Wash and chop Tomato into small pieces and keep aside.

Peel and chop the Shallots and keep aside.

Wash and slit the Green chillies and keep aside.



Keep aside Thick Coconut milk and Thin Coconut milk.

Method. -

Heat oil in a pan and splutter Mustard seeds and Cumin seeds and saute well.

Add chopped Shallots, Green chillies and Curry leaves. Saute well till the Shallots become transparent.

Add required Salt and mix well.

Add chopped Tomatoes and saute well.

Add the chopped Okra / Lady's finger and saute well.Cook till it turns tender.

Add the thin Coconut milk. Mix well and boil for 2 minutes on low flame.

Add the thick Coconut milk and mix well.When the bubble starts to appear switch off the flame.

A tasty Okra Stew /Lady's finger stew /Vegetarian Okra Stew is ready to serve with Appam, Rice etc.
