The following ingredients are needed to prepare Phova Kheeri/ Poha Kheer.
Ingredients:-
Red Rice thick Poha. - 1cup
Jaggery. -1 and 1/2 cup
Coconut milk [thick]. - 1cup
Ghee. -2tsp
Cardamom powder. -1tsp
Cashew nuts. - 6
Instructions:-
Heat 2tsp Ghee in a pan and roast the cashewnuts. When little cooled chop the Cashewnuts into large bits and keep aside.
In the same pan roast the Red variety thick Poha on low flame for 2 minutes and keep aside.
Grate the Jaggery. Add the grated Jaggery in a pan along with 1cup of water and boil well till the Jaggery gets dissolved in water. Switch off the flame and seive the Jaggery syrup with a seiver to remove the impurities.Keep aside.
Method:-
In a wide bottom pan add the roasted Poha along with 1cup of Water. Boil and cook the Poha till soft.
Add the Jaggery syrup. Mix well and boil.
Add the roasted Cashewnut bits and Cardamom powder and mix well.
Lower the flame and add the thick Coconut milk and stir well till the bubbles starts to appear. Switch off the flame.
A tasty Phova Kheeri/ Poha Kheer is ready to serve hot or cold.
Note:-
Red Rice Poha is made from red variety of rice.Red Rice Poha is a thicker variety Poha.Red Rice Poha contains fibre and bran and more tastier than white variety of Poha.
You can add thick White variety Poha instead of Red Rice Poha in the Phova Kheeri / Poha Kheer recipe.
