Piyyava Adgai / Shallots Pickle.


Shallot is called Piyyavu in Konkani. Piyyava Adgai is a hot and spicy instant Shallots Pickle.

The following ingredients are needed to prepare Piyyava Adgai / Shallots Pickle.

Ingredients:-

Shallots.       - 20
Coconut oil. - 2tsp
Salt.              - to taste


For grinding the Chilly paste:-

Dry Red chillies. - 4
Coriander seeds. -1tsp
Fenugreek seeds. - 8 seeds
Mustard seeds.     -1/4tsp
Tamarind.             - a Gooseberry size


For Seasoning:-

Coconut oil.     - 2tsp
Mustard seeds. -1tsp
Curry leaves.    -1spring
Hing powder.    -1/2tsp


Instructions:-

Peel and wash the Shallots and pat dry with a dry cloth.

Heat 2tsp oil in a pan and fry the Shallots for few minutes and keep aside.

In the same pan roast Red chillies, Coriander seeds, Fenugreek seeds and Mustard seeds seperately.

Grind the roasted Red chillies, Coriander seeds, Fenugreek seeds and Mustard seeds together to a fine paste adding Tamarind and little water.Keep aside the Chilly paste.


Method:-

In a pan add the fried Shallots, the ground Chilly paste, required Salt, 2tbsp of water and mix well. Boil for a minute and switch of the flame.

Heat oil in a pan for seasoning and splutter Mustard seeds and saute well.Add Curry leaves and Hing powder. Saute well and switch off the flame.

Pour the above seasoning into the Shallots Pickle in the pan.


Transfer the Piyyava Adgai / Shallots Pickle to a serving bowl.


A tasty and delicious Piyyava Adgai / Shallots Pickle is ready to serve as a side dish with Rice, Dosa, Idli etc.
