Brinjal is called Vaingan in Konkani.Vaingana Sagle / Brinjal Sagle is a Konkani dish made with Green lengthy Brinjals.
The following ingredients are needed to prepare Vaingana Sagle.
Ingredients:-
Green Brinjal. - 3
Grated Coconut. -1cup
Red chillies. - 5
Fenugreek seeds. -1/4tsp
Urad dal. -2tsp
Coriander seeds. -1tbsp
Hing powder. -1tsp
Tamarind. - a Gooseberry size.
For Seasoning:-
Cooking oil. -2tsp
Mustard seeds. -1tsp
Curry leaves. -1spring
Instructions:-
Wash the green lengthy Brinjal and remove the stalk.Chop the Brinjal into halves and again chop into 1inch lengthy pieces and keep aside.
Heat little oil in a pan and roast the Brinjal pieces on low flame and keep aside.
In the same pan roast Urad dal, Coriander seeds, Red chillies and Fenugreek seeds till nice aroma comes and keep aside to cool.
Grind the roasted ingredients along with grated Coconut, Hing powder and Tamarind to a smooth paste adding very little water and keep aside the ground Masala paste.
Method:-
In a wide bottom pan add the roasted Brinjals, required Salt and 2 cups of water. Boil and cook for 5 minutes on low flame.
Add the ground Masala paste and mix well. Cook for 5 minutes on low flame or till the gravy becomes thick.Stir in between and switch off the flame.
Heat oil in a pan for seasoning and splutter Mustard seeds and saute well. Add Curry leaves and fry well.Switch off the flame.
Pour the above seasoning into the Brinjal curry in the wide bottom pan.
A tasty Vaingana Sagle / Brinjal Sagle is ready to serve with Rice.
