The following ingredients are needed to prepare Drumstick Brinjal and Moong Dal Curry.
Ingredients:-
Split yellow Moong dal. -1cup
Drumstick. -2
Green Brinjal. -2
For grinding:-
Grated Coconut. -1cup
Coriander seeds. - 1 and 1/2tsp
Dry Red chillies. - 5
Methi seeds. -1/4tsp
Hing powder. -1/2tsp
For Seasoning:-
Coconut oil. -1tsp
Mustard seeds. -1tsp
Curry leaves. -1spring
Instructions:-
Wash and chop green Brinjal lengthwise and again chop into 1/2 inch pieces and keep aside.
Remove the outer skin /string and chop the Drumstick into 1 and 1/2 inch pieces. Wash and keep aside.
In a pan dry roast Coriander seeds and Methi seeds and keep aside.In the same pan add little oil and roast the dry Red chillies and keep aside.
Grind all the roasted ingredients along with grated Coconut, Tamarind, Hing powder and Salt to a smooth paste adding very little water and keep aside.
Method:-
Wash the split yellow Moong dal.In a cooking vessel add Moong dal and 2 cup of water. Boil and cook the Moong dal on low flame. Stir in between.
When Moong dal is half cooked add Drumstick pieces and cook for 5 minutes on low flame.
Add the chopped Brinjal pieces and cook till soft.
Add the ground Coconut Masala paste and mix well. Add little water and boil for 2 minutes.
The consistency of the gravy is semi thick. You can increase or decrease the consistency of the gravy by adding water according to your choice. Boil well and switch off the flame.
Heat oil in a pan for seasoning and splutter Mustard seeds and saute well. Add Curry leaves and fry well. Switch off the flame.
Add the above seasoning into the Curry in the cooking vessel.
A very tasty Drumstick Brinjal and Moong Dal Curry is ready to serve with Rice, Chapathi, Paratha etc.
