Koduve Polo is a Kochi GSB style Konkani recipe. Koduvi polo or Koduve polo is a tasty and spicy dosa made using Koduvi leaves. Koduvi is a small slightly bitter green leafy vegetable. We can make varieties of dishes with Koduvi leaves like Koduve Ghassi, Koduve Humman etc. A very tasty, easy to make and healthy recipe of Koduvi dosa and step by step method with photos.
The following ingredients are needed to prepare Koduve Polo / Koduvi Dosa..
Ingredients:-
Koduvi leaves. -1cup (tightly packed)
Salt. - to taste
For grinding the spicy Dosa batter:-
Grated Coconut. -1cup
Raw Rice. -2cup
Dry Red chillies. - 6
Turmeric powder. -1/4tsp
Tamarind. - a gooseberry size
Instructions,:-
1. Remove the roots, clean and wash the Koduvi leaves in water for couple of times. Squeeze the leaves and remove the water completely. Roughly chop the Koduvi leaves and keep aside.
2. Grind grated Coconut along with soaked Raw Rice (soak raw rice for 2 hours), dry Red chillies, Turmeric powder and Tamarind to a smooth paste adding very little water. Transfer the ground spicy dosa batter to a vessel.The consistency of the dosa batter is semi thick. No need to ferment the batter.
Method:-
1. Mix the spicy dosa batter with a laddle and add the roughly chopped Koduvi leaves into the dosa batter in the vessel.
2. Add required Salt into the batter and mix the batter with the chopped Koduvi leaves.
3. Heat a non-stick dosa tawa on medium flame.
4. Take a laddle full of spicy Koduvi dosa batter.
5. Pour the dosa batter on the hot tawa.
6. Spread the batter on the tawa and make thin or thick size dosa.
7. Cover the tawa with a lid and cook the dosa on low flame.
8. When one side is roasted well apply little oil on the dosa.
9. Flip the dosa with a flat spatula to cook the other side.
10. When both sides are cooked well transfer the Koduve dosa to a serving plate.
11. Make similar dosas with the remaining batter.
12. A very tasty Koduve Polo is ready to serve.

Left over Koduve dosa batter can be store in the refrigerator for further use.
