Kodubale

Kodubale is a crispy, crunchy and spicy rings and is a traditional tea time snack in Karnataka in south India.Kodu means horn and bale means bangle in Kannada language. The dough is shaped like a horn and then made into a circle like bangle. Kodubale recipe is given below with step by step photos.

The following ingredients are needed to prepare Kodubale.

Ingredients:-

Rice flour.            -1 cup
All purpose flour. -1/4 cup
Sooji rava.            -1/4 cup
Ajwain.                 -1/2 tsp
Black sesame.       -1/2 tsp
Asafoetida.            -1/4 tsp
Grated coconut.     -1/2 cup
Kashmiri chilly.     -2
Dry red chilly.       -10
Turmeric powder.  -1/4tsp
Cumin seeds.         -1tsp
Salt.                        -to taste
Oil.                         -2 tbsp
Oil.                         -for frying

Instructions:-

1). Heat 2 tbsp oil in a pan and keep aside.

2). Grind coconut, dry red chillies, kashmiri red chillies, turmeric powder and cumin seeds to a fine paste adding little water. Keep aside ground coconut masala.

Method:-

1). In a mixing bowl add rice flour, sooji rava, all purpose flour, ajwain seeds, black sesame seeds, asafoetida and mix well.


2). Add hot oil into the mixture and mix well to form a crumbly mixture.

 3). Make it into a crumbly mixture.


4). Add ground coconut masala into the crumbly mixture and knead well to form a soft dough.

 5). Take a small portion or gooseberry size portion of the dough and roll it by keeping it in between your palms. Bring together both the ends and shape into a roundel and keep the kodubale shape rings on a plate.Repeat the same and make kodubale shape rings with the remaining dough.

6). Heat oil in a frying pan and deep fry the kodubale in hot oil till it turns crispy and golden brown.

Very tasty and crispy Kodubale is ready to serve with a cup of hot tea or coffee.
