Colocasia Stem Stir Fry Adding Hog Plum (Konkani Recipe)


A tasty and delicious stir-fry made with Colocasia stems adding Hog plums goes well as a side dish with Rice and Dal curry.

The following ingredients are needed to prepare Colocasia Stem Stir Fry adding Hog plum.

Ingredients:-

Colocasia stem. -15 

Hog plum.          -2
Hing powder.     -1tsp
Red Chillies.      - 4 (broken into halves)
Mustard seeds.  -1tsp
Salt.                    - to taste
Coconut oil.        -2tsp

Instructions:-

1. Peel the outer thin skin of the Colocasia stems.





2. Chop the Colocasia stem into half inch lengthy pieces. Wash well and keep aside.




3. Wash and crush the Hog plums and keep aside.





Method:-

1. Heat 1tsp Coconut oil in a pan and splutter Mustard seeds and saute well.

2. Add broken Red Chillies and saute well.

3. Add chopped Colocasia Stems, required Salt, crushed Hog plums and 1/2 cup of Water and saute well.

4. Boil and cook on low flame till the chopped Colocasia stems become soft and the Water evaporates. Stir in between.

5. Add Hing powder and mix well.

6. Add 1tsp Coconut oil over the curry and saute well for few seconds and switch off the flame.

A very tasty Colocasia Stem Stir fry adding  Hog plum is ready to serve hot as a side dish with Rice and Dal curry.

Potato Kurma


Potato Kurma is a delicious gravy dish goes well with Rice, Chapathi, Phulkas etc.The following ingredients are needed to prepare Potato Kurma.

Ingredients:-

Potato.                 - 4 medium size
Green chillies.     -6
Tomato.               -1big
Onion.                  -1big
Turmeric powder. -1/4tsp
Coconut milk.       -1cup
Cinnamon.             -2 sticks
Cloves.                   - 4
Salt.                        - to taste
Water.                     -1/4cup
Coriander leaves.   - a bunch
Cooking oil.           -2tbsp


Instructions:-

Wash and pressure cook Potatoes with enough water to cover the Potatoes for 3 whistles.Once cooled peel the Potatoes and chop into medium pieces and keep aside.

Wash and grind the Green chillies in a blender to a smooth paste by adding 2tbsp of Water.Keep aside.

Peel, wash and finely chop the Onion and keep aside.

Wash and finely chop Tomatoes and keep aside.

Wash and chop Coriander leaves and keep aside.



Method:-

Heat oil in a wide bottom pan and add Cinnamon and Cloves. Saute well.

Add ground Green chilly paste and saute well.

Add finely chopped Onion and saute well till the Onion pieces become translucent and brown.

Add finely chopped Tomatoes and Turmeric powder.Saute well till the Tomato pieces become mushy.

Add chopped Potato pieces and required Salt. Mix well.

Add Coconut milk and mix well and boil. When small bubbles starts to appear Switch of the flame.

Garnish with chopped Coriander leaves.

A tasty and delicious Potato Kurma is ready to serve with Rice, Chapathi, Phulkas etc.

Wheat Flour Seedai





Wheat flour Seedai is a deep fried, crispy, round and crunchy Wheat balls made with roasted Wheat flour, Rice flour,Salt and other spices.This delicious snack is usually made during festivals like Sreekrishna Janmashtami.

The following ingredients are needed to prepare Wheat flour Seedai.

Ingredients:-

Wheat flour. -1 cup
Rice flour.     -1/2 cup
Salt.               - to taste
Cumin seeds. -1/2tsp
Sesame seeds.-1/2tsp
Hing powder.  -1/2tsp
Butter.             -2tbsp
Water               - as needed
Oil.                  - for deep frying

Instructions:-

Heat a pan and dry roast Wheat flour and stir well on low flame until the raw smell goes off and without changing the colour.Keep aside.

In the same pan dry roast Rice flour and stir well on low flame until nice aroma comes. Add the roasted Wheat flour, required Salt, Cumin seeds, Sesame seeds, Hing powder and Butter and mix with the Rice flour.Mix all the roasted ingredients together on low flame for a minute and remove from flame.



Method:-

Transfer all the roasted ingredients in a wide mixing bowl and slowly sprinkle required Water little by little and knead the flour with your hands to a smooth dough.

Take a small portion of the dough and gently roll into small round balls and keep aside.Make small balls with the prepared dough and keep them on a cloth to absorb the excess moisture.

Heat oil in a deep frying pan and drop the wheat balls (seedai) into the hot oil and deep fry the wheat balls.Flip and turn the Wheat balls in the hot oil with a slotted spoon to cook on both sides.


Deep fry the Wheat balls until golden brown colour.


Remove from hot oil with the slotted spoon and drain on a tissue paper to absorb excess oil.

A tasty, crispy and crunchy Wheat flour Seedai is ready to serve.

Drumstick Tomato Curry.

Drumstick Tomato Curry is a tasty and delicious coconut based Drumstick Curry adding Tomatoes and goes well with Rice.

The following ingredients are needed to prepare Drumstick Tomato Curry.

Ingredients:-

Drumstick. - 4
Tomato.      -2 medium size
Salt.            -to taste


For grinding the Coconut paste:-

Grated Coconut.  -1cup
Red chillies.         -5
Turmeric powder. -1/4 tsp


For Seasoning:-

Cooking Oil.     -1tsp
Mustard seeds.  -1/2tsp
Red chilly.         -1
Cumin seeds.     -1/2tsp
Curry leaves.      -1spring


Instructions:-

Peel the outer skin and chop the Drumstick into 1inch long pieces. Wash and keep aside.

Wash and chop Tomatoes into small pieces and keep aside.

Grind grated Coconut, Red chillies and Turmeric powder to a smooth paste and keep aside.

Broke 1 Red chilly into two halves  for seasoning and keep aside.


Method:-

In a cooking vessel add chopped Drumstick pieces and chopped Tomatoes and 1cup of water. Boil and cook till soft.

Add required Salt and mix well.

Add the ground Coconut Masala paste and mix well.Boil for 2 minutes and switch off the flame.

Heat oil in a pan for seasoning and splutter Mustard seeds and Cumin seeds and saute well.

Add broken Red Chilly bits and add Curry leaves. Fry well and switch off the flame .

Add the above seasoning into the Drumstick Tomato curry in the cooking vessel.

A tasty and delicious Drumstick Tomato Curry is ready to serve with Rice.

Rice and Maida Chakli / Chakkuli / Murukku

Chakli/ Murukku is called Chakkuli in Konkani.Chakkuli is a south Indian crispy and delicious deep fried snack made with Rice flour and Maida flour (all purpose flour) mixed with Indian Spices.Chakkuli is generally prepared during festival seasons and can also be served as a tea time snack.

The following ingredients are needed to prepare Chakkuli / Chakli / Murukku.

Ingredients:-

Rice flour.               -1cup
Maida flour.            -1/2 cup
Red Chilly powder. -1/2tsp
Turmeric powder.    -1/4tsp
Hing powder.           -1/2tsp
Cumin seeds/Jeera.  -1tsp
Curd.                        - 1/4 cup
Butter.                       -1tbsp or 1tbsp hot oil
Salt.                           -1/2tsp or to taste
Water.                        - 1/4 cup or as required to knead the dough.
Oil.                              -for deep frying.

Instructions:-

In a large mixing bowl add Rice flour, Maida flour, Salt, Red chilly powder, Turmeric powder, Hing powder and Cumin seeds. Mix well.Add 2tbsp Butter or 1tbsp hot oil and mix well. Add 1/4  cup Curd and mix well.

Pour required Water little by little into the flour. Mix well all the ingredients and knead the flour to make a smooth dough.

Method:-

Heat Oil in a deep frying pan on medium high flame.

Grease the inside of the Chakli maker with little oil and put the star shaped chakli mould inside the bottom of the chakli maker.

Fill the the chakli maker with the dough and close it tightly with its lid.

Press the chakli mould and make small spiral shape chaklis on a butter Paper.Seal the ends of the prepared Chaklis.So it does not fall while deep frying in the hot oil.

Drop the prepared Chaklis directly into the hot oil and deep fry on medium flame.

Flip the Chaklis with a slotted spoon and fry on medium flame till they turn crispy and golden colour on both sides.

Remove the Chaklis from hot oil with a slotted spoon and drain on a tissue paper to remove the excess oil.

Crispy, delicious and deep fried  Rice and Maida Chakkuli /Chakli /Murukku is ready to serve with tea or coffee.


When cooled store the Chakkuli in a clean, dry and air tight jars and it will lasts for a month.Chakkuli has a long shelf life if it stored properly.
