Lemon Vermicelli


 Lemon vermicelli with crunchy peanut is a very tasty and easy to make breakfast dish.

The following ingredients are needed to prepare Lemon Vermicelli.

Ingredients:-

Vermicelli.         -1 cup
Peanuts.              -1/4 cup
Green chillies.     -2
Dry red chilly.     -1
Curry leaves.       -1sprig
Turmeric powder.-1/4 tsp
Hing powder.       -1/4 tsp
Urad dal.              -1/2 tsp
Mustard seeds.     -1tsp
Salt.                      -1tsp
Water.                   -1 and 3/4 cup
Coconut oil.          -1tbsp
Ghee.             -1tsp for roasting
Lemon juice. -1/2 of a Lemon

Instructions:-

1). Heat 1tsp ghee in a pan and roast vermicelli on medium flame. Stir well until its colour slightly changes. Switch off the flame and transfer the roasted vermicelli to a plate.

2). Wash and chop green chillies into small round pieces. Broke one dry red chilly into 2 halves.

Method:-

1). Heat 1tbsp coconut oil in a wide bottom pan and add urad dal and saute well. When urad dal starts to change its colour splutter mustard seeds and saute well. Add peanuts into the pan and fry in oil on low flame.

2). Add broken dry red chilly pieces, chopped green chilly pieces and curry leaves into the pan and saute well in oil for a second.

3). Add turmeric powder, hing powder, salt and water into the pan. Mix well and boil on medium flame.

4). Add roasted vermicelli into the boiling water and stir well.Cover and cook vermicelli on low flame till water evaporates and vermicelli becomes soft. Stir in between and don't overcook it. Switch off the flame and let it rest in heat for few minutes and then remove the pan from flame.

5). Squeeze lemon juice from half of a lemon into the pan and mix with the cooked vermicelli.Transfer the lemon vermicelli to a serving plate.

Egg Rolls


 Egg roll is a very tasty and easy to make healthy breakfast dish.

The following ingredients are needed to prepare Egg Rolls.

Ingredients:-

All purpose flour.-1 and 1/4 cup
Wheat flour.        -1/4 cup
Onion.                 -1
Green chilly.       -2
Lemon Juice.      -1/2 of a lemon
Egg.                    - 2
Pepper powder.   -1tsp
Salt.                    -to taste
Butter.                 -1tsp
Hot water.           -3/4 cup
Chat masala.       -1/2 tsp

Instructions:-

1). In a mixing bowl mix together one finely chopped onion, little salt and 2 thinly chopped green chilly roundels. Squeeze lemon juice (1/2 of a lemon) over it. Mix well and keep aside the onion green chilly mixture. (You can add finely chopped tomatoes in the onion green chilly mixture instead of lemon juice).

2). In a large bowl add 1and 1/4 cup of all purpose flour (maida) and 1/4 cup of wheat flour.Add 1tsp salt and 1tbsp of oil into the bowl and mix the flour well. Add 3/4 cup of hot water into the bowl and mix both flour using a spoon.Once cooled knead the flour mixture to a firm dough using your hands.Add little oil over the dough and knead again.So it will not stick to your hands.Make small round dough balls.Roll out the dough balls using a rolling pin and make thin and little large round chapathis.
Heat a flat non stick pan and place the rolled chapathi on it and cook evenly drizzling little oil from the sides.Cook the rolled chapathi on both sides.Transfer the cooked chapathi to a plate.Repeat the same process with all dough balls and cook chapathis.

3). In a large glass beat 2 eggs with a pinch of salt and pepper powder and whisk well using a spoon.Heat 1tsp oil or butter on a pan. Add whisked egg mixture and make omlettes.

Method:-

1). On a clean serving plate place one cooked chapathi and put one omlette over the chapathi. Sprinkle little pepper powder over the omlette. Sprinkle finely chopped onion and green chilly mixture above the pepper powder. Sprinkle little chat masala on the top. Roll the omlette stuffed chapathi till the other end.

2). Stick one tooth pick through the rolled chapathi to prevent the egg roll to fall a part.You can wrap the egg roll inside a tissue paper or inside a white paper. In the same way make egg rolls using cooked chapathi, egg omletee and onion green chilly mixture.

Very tasty and helthy Egg Roll is ready to serve hot.

Capsicum Egg Noodles.


Capsicum egg noodles is a very tasty and easy to make noodles dish using hakka noodles, capsicum, frozen green peas, onion and scrambled eggs.

The following ingredients are needed to prepare Capsicum Egg Noodles.

Ingredients:-

Noodles.            -2 cup
Capsicum.          -2
Green peas.        -1 cup frozen
Green chillies.    -2
Onion.                -1
Egg.                    -2
Water.                 -3 cup
Cinnamon.          -1 inch piece
Soya sauce.         -2 tsp
Pepper powder.   -1tsp
Coriander leaves.-few
Oil.                      -2 tbsp +1tsp
Butter.                 -1tsp
Salt.                    -to taste

Instructions:-

1). Boil 3 cup of water in a vessel. Add 2 cup hakka noodles and little salt into the boiling water. Mix well and cook the noodles.When the noodles are 3/4 th cooked remove the vessel from heat and discard the boiled water from cooked noodles.Transfer the cooked noodles to a colander and wash the noodles 2 to 3 times under running water to cool.Then drain water completely from the cooked noodles.Apply 1tsp oil to the cooked noodles and mix well using your hands to remove the stickiness. Keep aside the cooked hakka noodles.

2). Beat 2 eggs in a glass adding little salt and beat well using a spoon. Heat a flat pan greased with little oil. Pour the beaten eggs on greased hot pan and scramble the egg mixture using a spoon.Keep aside the scrambled eggs.

3). Finely chop onion. Half slit green chillies.Chop capsicum into big square pieces.Finely chop coriander leaves.Keep aside.

Method:-

1). Heat 2 tbsp oil in a pan and add cinnamon, half slit green chillies and fry in oil for a second. Add finely chopped onion and saute well till the onion becomes translucent.

2). Add frozen green peas into the pan and cook till soft on low flame.

3). Add chopped capsicums and saute well.Cover and cook capsicum for a minute (Capsicum should not be over cooked).

4). Add cooked hakka noodles into the pan and mix well.

5). Add 2 tsp soya sauce, 1tsp pepper powder and required salt into the pan and mix well.

6). Add scrambled eggs into the pan and toss well. Add few finely chopped coriander leaves and mix well. Lastly add 1tsp butter on the capsicum egg noodles. Switch off the flame and transfer the capsicum egg noodles to a serving plate.

A very tasty Capsicum Egg Noodles is ready to serve hot.

Tomato, Cucumber, Pepper Juice


 Tomato Cucumber Pepper Juice/Cucumber Tomato drinks is a healthy and refreshing summer drink made with green cucumber, juicy tomatoes and black pepper corn.

The following ingredients are needed to prepare Tomato Cucumber Pepper Juice.

Ingredients:-

Green cucumber.   - 1
Ripe juicy tomato. - 2
Black pepper corn..-1/4 tsp
Salt.                        - to taste
Ice cubes.                -few

Instructions:- 

Wash green cucumber and peel the outer skin. Chop the green cucumber into small pieces.Wash and chop the ripe juicy tomatoes into small pieces. Keep aside.

Method:-

1). In a blender add the chopped cucumber pieces, chopped juicy tomato pieces, pepper corn and required salt and blend well without adding water.

2). Add 1 and 1/2 cup of water into the blender and blend again to a smooth paste.

3). Pour the tomato cucumber pepper juice into the serving glasses top up with ice cubes.

Tomato Cucumber Pepper Juice/ Cucumber Tomato Drink is ready to enjoy. Serve immediately.

Bakery Style Coconut Bun / Dilkush / Dilpasand Recipe


 Coconut Bun / Dilkush / Dilpasand is a homemade bakery style coconut bun stuffed with sweet coconut tutti frutti mixture baked in oven and a very tasty teatime snack.

The following ingredients are needed to prepare Bakery Style Coconut Bun / Dilkush / Dilpasand recipe.

Ingredients:-

All purpose flour/ Maida.-2 cup
Milk (lukewarm).  -1/2 çup
Yeast.                     -1/2 tbsp
Sugar.                     -2 tbsp
Salt.                        -1tsp
Water.                     -2 tbsp
Butter (melted).      -2 tbsp
Grated coconut.      -1/3 cup
Dessicated coconut.-1/4 cup
Powdered sugar.      -1/4 cup
Cardamom powder. -1tsp
Cashews.                 -10
Almond.                  -10
Tutti fruity.              -2 tbsp

Instructions:-

1). In a large glass mix together lukewarm milk and sugar. Add yeast into the milk sugar mixture and stir well. Keep aside the yeast mixture for 5 minutes to ferment.

2). In a bowl add freshly grated coconut, desiccated coconut, powdered sugar, cardamom powder, finely chopped cashews, finely chopped almonds, tutti fruity and mix together all the above ingredients using your hand. Keep aside the sweet coconut tutti frutti mixture for filling.

Method:-

1). In a mixing bowl add all purpose flour (maida), salt, melted butter, fermented yeast mixture, water and knead together to form a soft dough.Grease a pan with little oil and keep the dough in the oil coated pan and keep it aside for 2 hours to rest.After 2 hours dough will be double in size.

2). After 2 hours knead the dough again. Divide the dough into 2 equal portion of dough balls. Roll both the dough balls into equal round shapes.

3). Keep one rolled out round portion into a greased tray. Add sweet coconut filling on top of it leaving some space around the edges.

4). Brush little milk on the edges. Place second rolled out dough on top of the sweet coconut filling and gently press around the edges, so that both the dough stick together. Brush little milk all over the bun. Make a small X mark with knife in the middle.

5). Preheat oven at 180 degree C for 10 minutes. Place the tray inside the preheated oven and bake the bun for 30 to 35 minutes until it forms golden brown on the top.

6). Once done take out the tray from oven and let it cool.Once it cooled cut the coconut buns into pieces and store it in airtight box.

Homemade Bakery Style Coconut Bun / Dilkush / Dilpasand is ready to serve with hot tea or coffee.

Butter Roti


Butter Roti is a soft flat bread made with rice flour and all purpose flour (maida) and can be served as a delicious dish for breakfast or for dinner with tomato thokku or any other side dish of your choice.

The following ingredients are needed to prepare Butter Roti.

Ingredients:-

Rice flour.            -1 cup
All purpose flour.-1 cup
Salt.                      -to taste
Water.                   -1 cup or as required
Butter.                   -as required for roasting

Instructions:-

1). In a mixing bowl add rice flour, all purpose flour and required salt and mix well.

2). Add required water (about 1cup) little by little into the flour mixture. Knead the flour well and make a thick and soft dough and keep aside.

Method:-

1). Take a small portion of the dough and make a small lemon size dough ball.

2). Dip the dough ball in little dry flour and keep it on a chapati board and roll it into a thin round roti using a rolling pin. Make similar rotis with the remaining dough.

Method:-

1). Heat a non stick tawa on high flame. Place the rolled roti on hot tawa and roast it on medium flame.

2). Spread 1/4 tsp butter over the roti using a oil brush and roast the roti on medium flame.

3). When bubbles start to appear on top surface, flip the roti to roast the other side. Spread 1/4 tsp butter over the roti and gently press the roti with a flat spatula to puff up.

4). Flip the roti 2 to 3 times and roast well till it cooked and brown spots appear on both sides.

5). Remove the roti from hot tawa with a flat spatula and transfer to a plate. Repeat the process and roast the remaining rolled rotis. 

Soft Butter Roti is ready to serve hot with Tomato Thokku or any other side dish of your choice.

White Peas Spicy Masala Stir Fry


 White peas spicy masala stir fry is a very tasty and easy to prepare side dish goes well with rice and chapathi.

The following ingredients are needed to prepare White Peas Spicy Masala Stir Fry.

Ingredients:-

White peas.           -1 cup
Red chilly powder.-1tsp
Turmeric powder.  -1/2 tsp
Sambar powder.     -1tbsp
Asafoetida.             -1/2 tsp
Mustard seeds.        -1tsp
Curry leaves.           -1sprig
Salt.                         -to taste
Oil.                          -1tbsp

Instructions:-

Wash and soak white peas in water for 8 hours or overnight. Drain and pressure cook white peas for 3 whistles adding sufficient water. Keep aside the cooked white peas along with little cooked water.

Method:-

1). Heat 1tbsp oil in a wide bottom pan and splutter mustard seeds. Add curry leaves and saute well in oil.

2). Add red chilly powder, turmeric powder, sambar powder and asafoetida into the pan and stir well.

3). Add cooked white peas along with little cooked water and required salt into the pan and mix well till the spice powders nicely coated to the white peas. Switch off the flame.

4). Transfer the white peas masala stir fry to a serving bowl. 

A very tasty White Peas Spicy Masala Stir Fry is ready to serve as a side dish with rice or chapathi.

Paneer Kali Mirch / Black Pepper Paneer


 Paneer kali mirch is a very tasty and easy to prepare cashew onion based thick gravy dish made with paneer and flavoured with black pepper powder. Paneer kalimirch goes well with naan, chapathi and rice.

The following ingredients are needed to prepare Paneer Kali Mirch / Black Pepper Paneer.

Ingredients:-

Paneer.              -250 gm
Onion.               -2
Cashews.           -10
Garlic chopped .-1tsp
Ginger chopped.-1tsp
Yoghurt.             -1tsp
Green chillies.    -3 slit
Cinnamon stick. -1 small
Cloves.               -3
Cardamom.         -3
Bay leaf.             -1
Garam masala.    -1/2 tsp
Pepper powder.   -1tsp
Water.                  -as required
Salt.                     -to taste
Ghee.                   -2 tbsp
Kasuri methi.       -1/2 tsp crushed
Coriander leaves. -few

Instructions:-

1). Slice paneer into cubed pieces. Slit green chillies .Chop onion, ginger and garlic into small pieces. Keep aside.

2). Heat 1tbsp ghee in a pan. Add cinnamon stick, cloves, cardamom and cashews into the pan and saute well.Add chopped onion, slit green chillies, chopped ginger, chopped garlic and saute well. Add yogurt and 1cup of water into the pan and boil it for 5 to 7 minutes on medium flame or till the onion pieces become translucent and cashews become soft. Switch off the flame and transfer all the above ingredients on a plate to cool.

3). Once cooled discard cinnamon stick, cloves, cardamom and slit green chillies and grind the boiled ingredients (cashews, onion, ginger, garlic, yogurt) to a smooth and thick paste adding little boiled and cooled water. Keep aside the ground thick cashew onion paste mixture.

Method:-

1). Heat 1tbsp of ghee in a pan and add 1 bay leaf into the pan and saute well.

2). Add ground thick cashew onion paste mixture into the pan and mix well.

3). Add required salt and 2 cup of water into the pan and mix well. Boil the gravy for 2 to 3 minutes on low flame. Add garam masala powder and black pepper powder into the boiled gravy and mix well.

4). Add paneer cubes into the gravy. Add crushed kasuri methi and mix well.

5). Boil the paneer gravy for a minute and switch off the flame. Garnish the paneer kali mirch gravy with few coriander leaves.
